1 small tomato, chopped
1/4 cup (50 mL) dry white wine or
chicken broth
1/4 tsp (1 mL) dried basil leaves
E/8 tsp (0.5 mL) pepper
1/2 Ib (250 g) cooked ham, cut
into thin strips
1/4 cup (50 mL) grated parmesan
cheese
Cook pasta according to package
directions. In large frying pan, melt
butter over medium heat. Stir in
garlic, asparagus, tomato, wine, basil
and pepper. Bring to a boil; simmer
for 6 to 8 minutes or until asparagus
is tender. Stir in ham and cheese and
heat through. Drain pasta well and
toss with sauce. Serve immediately.
ASPARAGUS SALAD NIROISE
I lb (500 g) asparagus
2 cups (500 mL) cooked cubed
potatoes
1 cup (250 mL) mushrooms, sliced
1 can (4.2 oz/I20 g) chunk tuna,
packed in water
2 hard -cooked eggs, peeled and
cut into wedges
1 tomato, cut into wedges
8 oil -cured olives
Mustard Vinaigrette:
1/3 cup (75 mL) extra -virgin olive
oil
2 tbsp (25 mL) each white wine
vinegar and water
1 clove garlic, minced
2 tsp (10 mL) each dried tarragon
and Dijon mustard
I tsp (5 mL) drained capers
1/4 tsp (1 mL) salt
1/8 tsp (0.5 mL) black pepper
Break off and discard tough ends
from asparagus. In pot of boiling
salted water, cook asparagus until
tender -crisp, 3 to 5 minutes. Drain;
rinse under cold water.
On two dinner plates, arrange
attractively in groups: asparagus,
potatoes, mushrooms, tuna, eggs and
tomato; sprinkle with olives. Set
aside.
In blender or small bowl, whisk
together oil, vinegar, water, garlic,
tarragon, mustard, capers, salt and
pepper; drizzle over arranged salad.
Serve immediately.
ADDED FIBRE MACARONI
SALAD WITH ASPARAGUS
AND LEMON DILL DRESSING
Dressing:
2 tbsp (25 mL) lemon juice
2 tbsp (25 mL) chopped fresh dill
or 1 tsp (5 mL) dried dill weed
2 tsp (10 mL) capers, chopped
1 tsp (5 mL) Dijon mustard
1/3 cup (75 mL) homemade or
canned reduced -salt chicken broth
1/3 cup (75 mL) vegetable oil
salt and pepper
Salad:
1 375 -gm package added fibre
macaroni
1/4 Ib (125 g) fresh asparagus,
steamed and cut into I -inch
lengths
1 carrot, shredded
1/2 cup (125 mL) cubed light
cheddar cheese
16 cherry tomatoes, cut in half
Combine lemon juice, dill, capers
and mustard; whisk in broth and oil.
Season to taste with salt and pepper;
set aside.
Cook macaroni according to
package directions. Drain and rinse in
cold water to cool; drain well.
Combine macaroni, asparagus,
carrot, cheese and tomatoes. Pour
dressing 'over macaroni mixture and
toss well.
CREAMY ASPARAGUS AND
MUSHROOM RISOTTO
1 Ib (500 g) asparagus
1 tbsp (I5 mL) olive oil
I onion, chopped
1 clove garlic, minced
1/2 Ib (250 g) mushrooms, sliced
(about 4 cups/IL)
1 cup (250 mL) arborio rice
(short -grain rice)
2 cups (500 mL) chicken stock
1/2 tsp (2 mL) each dried tarragon
and basil
1 can (385 mL) 2% evaporated
milk
1/2 cup (125 mL) freshly grated
parmesan cheese
1/4 cup (50 mL) chopped fresh
parsley
1/4 tsp (1 mL) black pepper
Break off and discard tough ends
from asparagus; cut into 1 l/2 -inch (4
cm) diagonal pieces. In large pot of
boiling water, cook asparagus.
uncovered for 3 to 5 minutes or until
tender crisp. Drain and rinse under
cold water. Set aside.

and mushrooms; cover and cook for
