Lucille Merkley
Is New Secretary
The fifth meeting of the Wing-
horn Penny Savers was held on
Wednesday evening at the home
of Ruth and Mary Taylor. To
allow for the proper cooking time,
Mrs. Lapp prepared a roast of
pork and put it in the oven.
The opening exercises were then
held, with the Ode, 4-H Pledge
and Motto being used. Since the
secretary, Elaine Moffat, 'has with-
drawn from the club, Betty Ann
Lapp read the minutes and called
the roll, which was answered by
"One way I could improve my
food selection". Lucille Merkley
was elected the new secretary. It
was decided to visit the slaughter
house at gollyrood, and Joyce
Morrison invited the members to
meet at her home for the May 6th
meeting.
Mrs. Currie explained the Var-
ious cuts of pork and where they
are located on the hog. Mrs. Lapp
told how to cook such cuts of
pork as chops, bacon and liver and
demonstrated frying bacon and
liver with onions,
The members are to complete
the pork chart in the members'
pamphlet, drawing in the sections.
They then sampled the bacon, liv-
er and onions and the roast pork,
which were delicious.
The home assignment includes
the completion of the table of pork
cuts, trying one liver recipe and
one recipe using pork and to re-
port the results in the record hook.
The roll call for the next meet-
ing will be to give one good rea-
son for cooking liver.
