Village Squire, 1979-03, Page 16Randy Gopal has turned to a mechanized mixer for use in the bakery as the business has boomed. All this growth was about as accidental as the beginnings of the Sun and Moon bakery in the first place. The idea first was to produce only one kind of granola and do it well. Then someone asked them for a different kind and they tried it and so the chain started to develop until today there are no less than 18 kinds of granola coming from the ovens of the bakery. They are producing granola for four different whole food distributors in Ontario, each of whom has their own product lines. The flavours range from maple syrup granola to Triticale -almond granola to a special diabetic granola using no sweeteners. Granola has become a big business for the bakery. Each week about 2500 pounds of the cereal are mixed and baked and sent out to distributors and small health food shops such as the local outlet for Sun and Moon products, The Gentle Rain shop in Stratford run by Vivien and Richard Capener which opened a couple of months ago but is already selling 100 pounds of granola a week. The next product to come along was the granola cookie. The cookies were again a product of experimentation in the family kitchen. They looked up a recipe for cookies in a cook book and tried it, but didn't like the taste so they tried experimenting. Again the idea was to produce just one kind of granola cookie and one size, their gigantic five and half ounce cookie that is almost a meal in itself. But then the request came for variations until today there are five variations of the big cookies: fruit and seed granola, carob mint coconut, nutty maple granola. sunburst granola, and triticale almond crunch. The popularity of the five variations is very even. On this particular day 100 dozen cookies are coming out of the oven and being packed, 20 dozen of each kind. The most controversial of the cookies. Randy says is the carob mint coconut. Some shops report it is their best seller while in others. people can't stand the taste and bring the cookies back. Still, overall it's a very popular cookie. The cookies today find themselves going a long way in Canada. They're sold in stores in New Brunswick and Newfoundland, Ottawa, Kingston and of course Toronto.
