is lost as they prepare to make oatmeal cookies and french
pastries. Nobody needs to ask what to do next. They work
efficiently as part of a team that senses the necessity for
speed. Baking usually starts at about five o'clock in the
morning and cleaning up is usually° finished by noon hour.
They make all their own pastry novelties and specialize in
Dutch pastry, wedding cakes and birthday cakes. As in most
bakery shops doughnuts are a big seller.
"We freeze a lot of things. The freezing process in the
bakery business is a tremendous labor-saving device today,"
Doug said.
This is good especially since with some things like beef pies
and beef rolls they would probably make enough to last a
month so freezing is a nice way of storing them.
The staff works a regular eight hour day and the bakery is
operated six days a week. The restaurant opens at 7 a.m. and
stays open until 7:30 p.m. except for Sundays when it is open
from 12 a.m. until 7 p.m. The restaurant serves as a friendly
meeting place and offers family fare food.
Some of the recipes for their different baked goods are
years old and some have been family hand -downs. Although
they don't deliver any more. Bartliff's still does a good
business with the tourist industry.
The Bartliffs employ a staff of about 23 full and part-time
employees. Mr. Bartliff himself enjoys the bakery and
restaurant business partly because he's never experienced
anything else and also because, '`I take a bit of pride in
turning out a good product and I like meeting a lot of fine, fine
people," he says.
It is around Bartliff's that the town of Clinton itself
functions. Here important business is conducted over a
friendly cup of cuffee in a casual atmosphere. It is also a
family type restaurant with the same type of food service or it
can be just a social place to have a cup of coffee and a friendly
chat with a neighbour.

Maybe he'll have his own bakery someday but for now John
Hessels is content to prepare a pastry treat for the oven.
