He said the first year in the restaurant it was just mostly
fast cooked meals but then he found that the area needed a
little better than just an ordinary restaurant.
In spite of its gourmet cooking, Harry and Carlos don't
expect people to come in ties and fancy dress, although once
people have been there they often do get dressed up the
second time, Harry says.
They just don't want anybody coming in in shorts or half
naked.
Carlos sold his place in California last year in order to come
up to the restaurant in Bayfield.
"I asked him to come and give me a hand. I didn't think he
would like to compared to Hollywood." Harry said.
But Carlos does like Bayfield. "I can enjoy my cooking and
give better service to the people. It's a more relaxing place
than the big city."
Carlos added that it gave him a chance to know his
customers and the good and bad things about his cooking. In
his cooking Carlos uses his own recipes, recipes which he has
been building up over the years.
"We enjoy the people we meet here. We try to please
everybody as much as we can. We add more things to it as the
years go by. We're very proud of the place as it is. We're
trying to make it a favorite spot,' Harry said.
They have no desire to make the restaurant any larger
because then they wouldn't be able to give the people the
individual service they are getting now.
They serve a full course lunch every day. They have 14
dishes plus a daily special. One unusual special they have is a
pork chop matador which is a pork chop stuffed with black
cherries and covered in red current sauce.
Price ranges from salads which cost 35.95 and meat dishes
which range in price from $7.50 to $12.50. Vegetables are
served a la carte and cooked up individually.
Reservations are very important at the Red Pump
Restaurant so that they can provide the right number of staff
to give faster service.
The Red Pump has two previous owners -- a Mr. Bender
who started the restaurant who then sold to an American
couple who did mostly homecooking. The only explanation for
the name Red Pump is the red pump that sits outside the
restaurant.
Along with the lunches and dinners that they will serve
outside in the patio if the weather permits it, Harry and
Carlos are trying to get a liquor licence to serve drinks
outside. ■
