baked eggs. This is a really interesting way to begin Valentine
day.
My sister was married at a small inn near Owen Sound. The
proprietor of this place was noted far and wide for his Angel
Cake. A man, you see, can make a cake.
Beat 10 egg whites (11/4 cups) until foamy. Add 1/4 teaspoon
salt -and 1% teaspoon cream of tartar. Beat now until stiff but not -
dry,. Add 1 cup sugar gradually and 1 teaspoon each of vanilla and
almond extract. Sift 1/2 cup fine sugar with 1 cup flour and two
tablespoons very thoroughly and sift into the egg whites 1/4 at a
time. Fold in each time till the flour disappears. Pour into an
ungreased 10" tube pan and bake at 375 degrees for 35 minutes.
Be sure of both temperature and time. Cool inverted 1 hour then
loosen from sides of -pan and remove the cake. You have a perfect.
snowy cake with a golden outside to delight your party guests.
Try frosting. this delight with any fluffy white frosting and
sprinkle with crushed red and white peppermint sticks as an
added Valentine treat.
When you ice a cake like this try placing'it on one of the
convenient lazy suzans available now. It will turn easily and a
smooth professional end product results.
Another delicious- red, pink and white is sherried cranberry
sauce for use over ice cream. Cook 'h Ib. fresh cranberries in 1
cup sherry and '/2 cup water. Use a good sherry since it is this
author's contention that if it isn't fit to drink it isn't fit to cook
with.
t:rush the cooked berries and add 1 cup sugar in ' cup of
seedless white raisins. Don't use the dark coloured raisins for
this. Wait till you can get the white. Cook 15 minutes then chill.
Serve the sauce on vanilla ice cream for an attractive Valentine
dessert -
And now a few hints to help produce a perfect meringue. It is
hest to start with fresh cold eggs. A fresh egg has a thick firm
white. A cold egg -has a firm yolk. Both conditions are best for
easy separation. Never allow the slightest bit of yolk in the white.
Any trace of fat at all on bowl or whisk will reduce the volume of
the beaten white.
Use a French Whisk and a Copper bowl for best results bat
since copper bowls are costly, scarce and had to keep looking
good, use any cool bowl.
Use 1/8 tsp. cream of tartar per egg white, this is a stabilizer
that assists the beaten mass remain soft, '4 tsp. salt per cup of
egg whites (7 - 9 eggs) helps increase volume but too much salt -
will decrease the .volume.
Weeping Meringues are the result of too much of too coarse
sugar Use fine sugar and add a little at a time at the soft foam
stage; Shrunken, tough meringues are also the result of too much
sugar A slow oven will have the same effect. 425 degrees F. is
hest.
Follow the recipes for meringues carefully. Keep this
suggestions in mind and you will become famous for the
excellence 01 your Product.
