The right way to carve
The turkey is out of the oven —
juicy, golden brown and ready for
carving. To serve the perfect holiday
turkey from roast pan to platter, the
following carving tips, supplied by
the cutlery experts at Revere, should
The essential tool for carving a
turkey is a sturdy and reliable eight
inch carving knife. It should fit com-
fortably in your hand and have a
blade created of molybdenum
stainless steel for easy sharpening
and carefree cleaning.
Another feature to look for is a
tang that extends the length of the
handle (a tang is the part of the
blade that connects the knife to the
handle) .

• To begin carving, -start with the
drumstick and thigh. Using knife
blade, press leg , way from body of
turkey until the joint th...t connects
leg to backbone snaps free.

carefully carve remaining dark•
meat from the bone.
• Cut through joint connecting
drumstick and thigh. Place thigh on
separate platter, and begin to carve
drumstick by tilting bone to comfor-
table angle and .slicing downward.
For thigh meat, secure piece in
place with fork and slice parallel to
bone.
• For the best results when carv-
ing the breast, focus on half a ' breast
at a time. To carve first half,
remove from roast by cutting along
the breast bone and rib cage and
then lifting meat away from bone.
Place on cutting board and slice
evenly, going against the meat's
grain. As more slices are needed,.
remove second half of the breast and
repeat.
Arrange meat on platter,
separating white and dark meat.
Garnish with holiday trimmings
such as seasonal fruits and
vegetables. Then relax and enjoy
this is one meal everyone loves - mo
matter how you slice it.

fees, like mocha almond, are coffee
beans that have had various flavors
added to them after roasting.
Experiment with various bends
and roasts to discover the one(s)
that best suit your tastes. Buy small
amounts of coffee beans and sample
at home. A coffee salesperson should
be able to answer any questions
about different blends and roasts.
