Clarke, aged 23, lives with his parents in the small hamlet of Bognor, near Owen Sound. He and his father, Erwin, farm 300 acres of rented land near Bognor, buying in shortkeep Western calves, and operate a livestock trucking business to Kitchener and Toronto markets. As a member of the Rocklyn Junior Farmer Club for eight years, Clarke has held many posi- tions at club, county, and zone levels, including his current posi- tion as county president. He has also been president of the Grey County 4-H council and was the 1985 recipient of the Grant Sweiger memorial award, which recognizes an outstanding 4-H member within the county. Clarke is also a member of the Rocklyn agricultural society. In addition to cooking, his hobbies include curling, baseball, and a hat collection consisting of 75 hats, so far. Cheese Omelette Ingredients: 6 eggs 1/4 cup onions, chopped finely 1/4 green peppers, chopped finely '/ to 3 cup ham, depending on preference, diced finely '/ cup celery, chopped finely garlic salt to taste dash of pepper '/ cup milk cheese slices Method: Combine all ingredients except cheese slices in a large bowl and beat until fluffy. Place in a well greased fry pan at medium heat and flip when one side is done. Im- mediately add the cheese slices and continue to fry until done. Serve with tomatoes, toast, and home - fries.
