Sicilian cake
for the
festive season
Kathy Biondi
Kathy and Peter Biondi are setting
their own Canadian -Italian traditions
for themselves and their three
children. One such tradition is
Cassata alta Siciliana, a Sicilian cake
with chocolate frosting. A cassata is a
layer cake with the filling and cake so
subtly combined that it's sometimes
difficult to tell where one ends and
the other begins. It was once served in
Sicily only at feasts of renewal during
Christmas and Easter. Today it is also
served at weddings to signify the
beginning of a new way of life, and in
the Biondi home in Lucan, is served
on Peter's birthday, simply as a fami-
ly tradition.
Kathy prepared the recipe at the
food lab of Centralia College for our
Rural Living story. As head of Com-
munications and Continuing Educa-
tion, she is more often seen teaching
communication classes or planning
upcoming courses. But she is no
stranger to the kitchen. The former
4-H home economist in Kent and
Essex County attained her M.A. in
Home Economic Education at Mount
St. Vincent in Nova Scotia before
taking her current position at the col-
lege.
