RURAL LIVING
Schnitz Peach Pie
(9 -inch pie)
5 cups peeled, sliced Ontario peaches
(2 pounds)
1 9 -inch unbaked pie shell
'h cup flour
1/2 cup sugar
3/4 cup sour cream
2 to 3 tbsp brown sugar
Arrange peach slices in pie shell.
Combine flour, sugar and sour
cream. Pour over peaches. Bake at
220°C (425°F) for 12 minutes.
Reduce heat to 180°C (350°F). Con-
tinue baking until fruit is tender and
filling is set, about 40 minutes. Top
with brown sugar and return to oven
for 5 minutes. Cool to room
temperature before serving. (Pie may
bubble over slightly during baking.).
Pear Crisp
5 cups sliced fresh pears
1/2 cup sugar
2 tablespoons lemon juice
1 cup sifted all-purpose flour
1/4 teaspoon salt
1/8 teaspoon mace
1/2 cup firmly packed brown sugar
1/2 cup cornflake crumbs
'/3 cup butter or margarine
Preheat oven to 325°F. Arrange pears
in buttered 11 by 7 -inch utility dish.
Sprinkle with sugar and lemon juice.
Sift together flour, salt, and mace.
Stir in brown sugar and cornflake
crumbs. Add butter to form crumbly
mixture. Sprinkle over pears. Bake 35
minutes or until pears are tender and
topping golden. Serve warm. Serves

Pear Pie
Pastry for 2 -crust, 9 -inch pie
4 cups peeled, sliced pears
2/3 cup granulated sugar
11/2 tablespoons quick -cooking
tapioca
1/4 teaspoon mace
1/8 teaspoon salt
3 tablespoons orange juice
1 tablespoon lemon juice
1 tablespoon butter
'/4 teaspoon ginger
Line pie plate with pastry. Arrange
pears in pie shell, heaping in centre.
Combine dry ingredients; sprinkle
over pears. Add orange and lemon
juice; dot with butter. Adjust top
crust; seal and flute edges; cut steam
vents. Bake at 425°F. until pears are
tender (30 to 40 minutes). Serres 6.
