Rhubarb Nectar
Keep a bottle of Rhubarb Nectar in the
fridge for cooling drinks throughout the
summer.
Boil in 1 qt. water, for 10 minutes,
3 qts. chopped rhubarb
3 oranges, quartered
3 or 4 in. broken cinnamon bark.
Strain thoroughly, so that only the
dry pulp is left. Strain the juice through
cloth, and boil it for 3 minutes with 1/2
cup sugar for each cup of juice. Cool,
and keep in bottles in the refrigerator.
Mix half -in -half with soda water or ginger
ale, and float an ice cube and a sprig of
mint in the top of each glass.
Strawberry Soda
Sodas have slipped out of fashion —
temporarily, I hope. No soda is as pretty
as a strawberry soda, especially with a
whole unhulled berry on top. Strawberry
syrup is available in supermarkets.
2 tbs hulled crushed strawberries
1 tbs granulated sugar
2 tbs strawberry syrup
3 scoops good vanilla ice cream or
Strawberry Ice Cream
2/3 cup chilled soda water
1 unhulled strawberry
Combine the berries, sugar and syrup.
Stir to dissolve the sugar. Pour about a
third of this into a soda glass or any tall
narrow 11/2 cup glass, add a scoop of the
ice cream. another third of the strawberry
mixture, another scoop of the ice cream,
the rest of the strawberry mixture, then
the last scoop of ice cream. Gently pour
the soda water into the glass, top with
the whole berry and serve immediately.
Yields 1 big soda.
Strawberry and Rhubarb Jam
This combination of fruit is an old
Canadian favourite.
4 cups hulled strawberries
4 cups rhubarb, in 1/2" pieces
6 cups granulated sugar
Combine the ingredients in a preserv-
ing kettle. Let stand 4 hours, stirring
occasionally. As the sugar dissolves,
juices will flow.
Bring to a rapid boil over high heat,
stirring frequently. The jam usually takes
about 18 to 20 minutes to thicken and
set. Remove from heat, skim and stir 4
minutes. Pour into hot sterilized jars.
Yields about five 8 oz. jars.
