The Rural Voice, 1982-03, Page 26THE RURAL FAMILY Hungry for goodies but your time is short? Make up some of these basic mixes and bake in a hurry. BASIC PUDDING MIX 3/3 cup cornstarch 1 cup sugar 1/2 tsp. salt 4 cups skim milk powder Mix all ingredients and sift three times. Store in tightly covered container. Makes 5 cups. VANILLA PUDDING 2 cups pudding mix '/4 cup butter 3 cups cold water 1 tablespoon vanilla Stir and cook pudding mix 'and water in double boiler until thick. Stir in 1/4 cup butter. Cool slightly. Add vanilla. 6 servings. CHOCOLATE PUDDING 2 cups pudding mix 1/3 cup cocoa 1/4 cup butter 3 cups cold water 1/4 cup sugar 1 tablespoon vanilla Follow same directions as for vanilla pudding. PIE FILLING Any of these puddings may be used as a pie filling by adding 2 beaten egg yolks. When pudding is thick, gradually add a little hot mixture to the egg yolks. Return to remaining hot mixture in double boiler and cook 1 to 2 minutes. Fills one baked 9 -inch pie shell. QUICK MIX This is a recipe for tea biscuits that can be made up quickly. 9 cups sifted bread flour or 10 cups sifted pastry flour 3 tablespoons granulated sugar 4'/2 tablespoons baking powder 2% teaspoons cream of tartar 1 tablespoon salt 2 cups shortening Sift together ingredients, add shorten- ing, cut into pieces and blend. Store in covered container in cool place. When you are going to use some of this mix - add 1/4 cup of milk to each cup of mix you use. For variations, add '/4 cup of grated PG. 24 THE RURAL VOICE/ MARCH 1982 nippy cheese and '/4 cup of milk to each cup of mix. Bake at 4500F for 12-15 min. MARTIN'S HOT CHOCOLATE 8 cups powdered milk 11/2 cups icing sugar ' jar coffee creamer 2 lbs. instant chocolate (e.g. Quick or No -name) Mix together and store in dry place. For 1 cup chocolate use 3 tablespoons and fill up with hot water. BRAN MUFFIN MIX A very old recipe and a boon to a busy homemaker. 1 cup Crisco 3 cups white sugar 3 tablespoons baking soda 1 tablespoon salt 2 cups boiling water 2 cups 100% bran, coarse 4 cups bran flakes 1 quart buttermilk 5 cups all-purpose flour 2 cups raisins 4 eggs Pour boiling water over 100% bran and let stand. Cream Crisco, sugar and eggs; add buttermilk and then bran mixture. Stir until just blended. Sift flour, soda and salt and add to above mixture. Mix well. Add bran flakes and fold in until just moist. Add raisins. Chill 1 day before baking. Mixture will keep well for up to 6 weeks stored in a covered container in the refrigerator. Bake just as many as you need at 400 degrees F. for 15-20 minutes. Makes 6 dozen. Basic Rolled Oats Mix (from which you can make cookies. muffins, a cake or fruit pudding) In a large bowl mix the following ingredients: 3 cups skim milk powder 4 cups all-purpose flour 4 cups rolled oats (or 3 cups oats plus 1 cup bran) 1 tablespoon salt '/4 cup baking powder 11/2 cups lard or shortening Makes enough to fill a 1 -gallon ice cream pail. Store tightly covered in cupboard. FRUIT PUDDING Slice 2-3 cups raw fruit into a casserole. (Peaches, cherries or peeled apples). Drain any liquid off the fruit before using. Sprinkle fruit with about 1/4 cup sugar, Yo taste. In a separate bowl measure: 2 cups basic oats mix 3/4 cup sugar (brown or white) 2/3 cup water 1 tsp. nutmeg 1 tablespoon lemon juice Mix well and pour over top of fruit. Bake at 350 degrees for 45-60 minutes. MUFFINS 1 egg, beaten ' cup sugar 3/4 cup fresh Hulk 1/2 cup chopped raisins or aates '/2 cup nuts Mix in order given, then add 3 cups of basic oats mix. Fill muffin cups 2/3 full and bake at 375 degrees for 15-20 minutes. COOKIES 2'/2 cups basic oats mix 3/4 cup sugar 1 tsp. cinnamon 1/2 cup raisins '/: cup dessicated coconut 1 egg, beaten '/4 cup water or fruit juice 1 tsp. vanilla Mix first five ingredients in a bowl. In a separate bowl. mix egg, water or juice and vanilla. Add to dry ingredients. Drop by spoonful onto greased cookie sheet and bake at 375 degrees for 12-15 minutes. CAKE 3 cups basic oats mix 1 tsp. cinnamon 1 cup chopped dates or raisins 3/3 cup brown sugar 1 tablespoon orange or lemon rind (grated) 2 eggs, beaten 1 cup orange juice Bake in 9" square greased cake pan at 350 degrees for 20-25 minutes or until done. Serve warm or ice and serve cold.
