LAMB CHOPS IN WINE
Brown loin lamb chops in butter with a
few small white onions and carrots.
Season with salt and pepper. Add '/2 cup
dry white wine and 1/2 Ib. sliced
mushrooms. Cover and let cook very
slowly for 30 minutes. (Tomato juice
diluted with a little water may be used in
place of wine).
The next time I make this I am going to
use fresh pressed apple juice instead of
wine. Bev Brown.
JAMBALAYA
[a Creole dlsh]
1'/z cups cold cooked lamb, veal or
chicken
11/2 cups cooked long grain rice
1 cup chopped celery
1 large onion, chopped
1/2 green pepper, chopped
19-oz.canned tomatoes
salt and pepper
buttered bread crumbs
Cook meat, rice and tomatoes together
for 10-15 minutes. Add other ingredients
and pour into PA -quart baking dish.
Cover with buttered bread crumbs. Bake
one hour at 350 F.
