VEGETABLE BEEF SOUP
1 - 2 beef shanks - meaty
4 potatoes, peeled and grated
6 carrots, peeled and grated
2 onions, chopped fine
'A cup miniature macaroni
salt, pepper, celery salt,
ground bay leaves
'A cup pot barley
Boil beet shank in large pot water until
done. Remove and set on plate to cool.

Add grated vegetables, barley, macaroni,
onions and seasoning to taste. When
cooked, cut meat off shanks in small
pieces. Add to soup mixture. Freezes
well.
STUFFED FLANK STEAK [or Round]
Lay flank steak out flat and sprinkle both
sides with flour, salt and pepper. Using a
"meat" hammer, beat both sides until
well tlattened. (not until meat breaks
apart!)
Take about 2-3 cups dry bread and break
into small chunks. Fry 1 small (1-1'/2" in
diameter) onion. chop and fry in 2 tbsp.
butter. Mix with bread.. Add 8-10 sage
leaves, finely chopped. (or 1'/2 tsp. sage
powder) '/: tsp. savory. '/2 tsp. salt.
'/.tsp. pepper and mix. Add 2 tbsp.:miik
and mix again.
Take stuffing and lay down the length
of the flank steak. in the centre. Foldup
meat on all sides to form a roll. With a
very large darning needle and about 3' of
string (Both very clean!) start at one end
and sew meat together. making sure
there are no gaps where stuffing is
showing. Tie string. Roll meat in flour.
Place in hot pan (with fat. oil) and fry
until brown. rolling over to brown all
sides.
Place in casserole dish. Pour over top
one can consomme or onion soup. Cover
(with aluminum foil if you haven't a lid).
Add '/2 can water.
Bake at 350-400°F until meat is tender.
pierced with a fork. Take meat and place
on serving platter. Cut string and pull out
(meat will stay in roll). Cut into '/2"
slices. Serve with gravy. Thicken with a
little cornstarch if desired.
