Pour in melted shortening or oil and stir
until creamy and smooth. Spoon into
greased loaf pan smoothing the batter.
Bake at 3S0F for nearly 1 hour. Cut side of
bread away from side of pan, coolon rack.
Yield: 1 loaf
Variation: 1 egg (beaten) may be added, if
desired

SOYBEANS CREOLE
30 mI(2 tbsp.) oil
30 ml (2 tbsp.) onion, chopped
50 ml (4 tbsp.) green pepper, minced
30 ml (3 tbsp.) whole wheat flour
250 ml (1 cup) fresh or canned tomatoes
250 ml (1 cup) brown vegetable stock or
broth
500 ml (2 cups) cooked soybeans
salt and seasoning to taste
1. Saute onion and pepper in the oil.
2. Add flour and seasonings and blend
well. Add tomatoes and stock and cook 2 or
3 minutes.
3. Add soybeans and simmer 10 minutes.
4. Serve in individual bean pots and
ramekins, topped with minced parsley.
Serves 6.
WALNUT BEAN LOAF
500 ml (2 cups) cooked soybeans
250 ml ( 1 cup) bread crumbs
30 ml (2 tbsp.) melted margarine
30 ml (2 tbsp.) chopped green pepper
50 ml (1/4 cup) chopped onion
250 ml (1 cup) finely chopped toasted
walnuts
2 ml ('/ tsp.) salt
1 ml (1/4 tsp.) pepper
2 eggs, well beaten
125 ml ('/2 cup) cream
250 ml (1 cup) hot water
1 bouillon cube
Onion Sauce (recipe follows)
1. Preheat oven to 180 degrees C. - 350
degrees F. Grease standard size loaf pan.
2. Combine soybeans, bread crumbs,
butter, green pepper, onion, walnuts and
seasonings.
3. Mix eggs with the cream, stir into the
bean mixture, and toss lightly.
4. Pour into loaf pan, Bake for 1 hour,
basting frequently with water in which
bouillon cube has been dissolved. Before
serving, pour Onion Sauce over loaf.
Serves 4.
ONION SAUCE
30 ml (2 tbsp.) margarine
45 ml (3 tbsp.) chopped onion
20 ml (11/2 tbsp.) all-purpose flour
1 ml (1/4 tsp.) salt
.5 ml (1/8 tsp.) pepper

300 ml (11/4 cup (milk)
1. Melt butter in saucepan. Saute onion
until tender.
2. Blend flour into butter and onion.
3. Stir in seasonings and milk. Stir until
well blended. Bring to a slow boil, stirring
constantly. Simmer 10 minutes. Pour over
loaf.
COURTRIGHT CURRY
50 ml ('/4 cup) chopped celery
1 green pepper, cut in strips
1 medium onion, chopped
oil
30 ml (2 tbsp. (flour)
500 ml (2 cups) chicken broth
10 ml (2 tsp.) curry powder
500 ml (2 cups) cooked soybeans
1. Saute vegetables in oil until soft and
onion is transparent. Move to one side of
pan.
2. Add more oil if necessary and blend
flour into this.
3. Add liquid gradually, stirring until
thickened. Add curry powder and blend.
4. Add soybeans and stir. Cook 10 to 15
minutes until flavours blend.
Serve with cooked rice and any of the
following sambals:
raw onion, green pepper strips, pineapple
cubes, mandarin orange sections, peanuts,
roasted soy nuts, raisins, shredded coconut,
chopped tomato, banana slices sprinkled
with lemon juice.
Serves 4.
