Combine all ingredients except whipped
cream. Simmer 30 min. or until onions very
tender uncovered. Puree stock in blender
till smooth. Reheat puree to just below
summing point & gradually blend in
whipped cream and stir constantly over low
heat. Serve immediately. Makes 6 cups.
Good to begin a dinner party with.
To prepare ahead, prepare to the point of
adding cream & refrigerate. Then reheat
and add cream before serving.
Correction:
The sugar was omitted from the Apple
Muffin recipe in last month's Rural Voice.
Here is the corrected version.
Apple Muffins
1' cups grated or finely cut up apple
% cup shortening
3/4 cup brown sugar
1 egg.
1 tablespoon milk or cream
1 cup all purpose flour
A few raisins or dates cut fine.
'/: tsp. salt
1 tsp baking powder
1/, tsp. nutmeg.
3/4 tsp. soda
1/4 tsp. cinnamon or pumpkin pie spice.
Method the same. Bake 375°F - for 20
min.
