The Rural Voice, 1978-11, Page 22eyed that it is butter price increases,
dictated by a formula for pricing milk
according to farmers rising production
costs which is creating the sales slump.
Choquette said the formula was under
review but added that it could be unfair for
the processors to expect that farmers.
faced with higher costs. not be able to pass
them on. That, he said. is the appeal that
dairy council made last year.
Choquette also said that cheddar sales
arc unlikely to increase much more,
leaving specialty cheeses as the only
growth sector of the market. and an
over-all picture of an industry in decline.
•
And he said the dairy commission "is
mt convinced that every processor is doing
his best to manufacture and market the
many specialty cheese varieties that are
consumed by Canadians."
Those not switching to production of
specialty cheeses are probably being left
behind and at the same time contributing
to Canada's dairy problems." he said.
He said the government's policy of
offering to buy surplus skim milk powder
and butter "may be detrimental to your
marketing efforts" because it leaves." no
real incentive to . divert production to
cheese."

Perth bean
yield below average
This year's yield of white beans in Perth
County is approximately 1,080 pounds per
acre which is up 300 pounds from last year
but down about 300 pounds from an
average year.
Pat Lynch, soils and crop specialist at the
Stratford OMAF office said dry weather
earlier in the summer was the direct cause
of the yield reduction. Also, Mr. Lynch
attributed 10 per cent of the yield loss to
poor weed control. Herbicides were
affected by the dry weather because they
didn't get moisture at the right time this
year to activate them properly.
Corn yields in the county are also down
