4 qts. chopped attd peeled tomatoes
2 cups chopped onions
1 c. chopped sweet red pepper
1 c. chopped sweet green pepper
1 small red hot pepper
3 tblsp. salt
21/2 c. w. sugar
2'/i c. vinegar
1 tblsp. cinnamon
1 tsp. allspice
Combine vegetables. salt, sugar and
cook until mixture begins tothicken. then
add vinegar and spices and cook until
mixture becomes a thick sauce. Seal.

Make a batch
of tomato sauce
Fully ripened tomatoes should be
refrigerated and used within 2 to 3 days.
Allow unripe tomatoes to ripen away from
direct sunlight at room temperature before
refrigerating them. Before serving. bring
ripe tomatoes to room temperature.
Tomatoes can be served in numerous
ways --in salads. as appetizers. in sand-
wiches. as a garnish and in many hot
dishes. cut up or crushed in a sauce.
Here's a terrific idea for great eating now
and later! Prepare a large batch of Farm
Fresh Tomato Sauce using fresh Ontario
tomatoes. Use sonic sauce now and freeze
the rest. It's handy to have ready to use in
casseroles. lasagna and other recipes that
call for a tomato sauce.
Farm Fresh Tomato Sauce
5 pounds tomatoes
2 onions. finely chopped
4 cloves garlic. minced
1 4 cup vegetable oil
1 2 minced green onion
I green pepper. seeded. chopped
1-3.4 cups dry red wine or tomato juice
2 tsp salt
1 tsp paprika
1 2 teaspoon oregano leaves
3 4 tsp pepper
3,4 tsp rosemary
1 2 tsp anise seed
Wash tomatoes. dip in boiling water.
then into cold water. Remove stem end and
peel. Chop coarsely. Cook onions and
garlic in oil until golden. Add remaining
ingredients. Bring to boil. stirring. Reduce
heat. Cover. Simmer 1 hour. Uncover.
Simmer 15 minutes. Cool. Transfer to
freezer containers. Freeze. Makes about 10
cups.
