The Rural Voice, 1978-09, Page 24Cheese plants surveyed Last August. Agriculture Canada's dairy division launched a major survey of specialty cheese plants in Canada. All 75 plants that make specialty cheese were asked for their views on milk supply and quality. the problems they face in production and marketing and what the federal government could do to help the industry. The federal government's interest in promoting specialty cheese production is largely due to the fact that it is a relatively new Canadian industry. and it is growing quickly. It is also important to find new markets for milk. in view of the decline in butter consumption. Canadian specialty cheese production rose by 14 per cent in 1977. to 119 million pounds. The survey found that most specialty cheese manufacturers attribute the strong gn *th in demand for their product to Canadians' taste for imports from Europe. Specialty cheese plant operators said for the most part they arc getting enough raw Hulk. but a few complained that lack of supplies forced them to work at less than capacit y. They were also concerned about the seasonality of milk production. The hulk of Hulk supplies arrive in the summer. but the demand for cheese is strongest in the %linter.
