light coating of an inert mineral oil
prolongs their shelf life. The treatment
:dready in use at some egg -producers'
plants. results in a higher -quality albumen
--the white part of the egg --after storage.
A. T. Hill and.,l. R. Hunt. scientists at
the federal research station. launched the
study in co-operation with the British
Columbia Ministry of Agriculture's poultry
branch. Agriculture Canada's Food
Production and Marketing Branch's
poultry division in New Westminster. B.C.
and the British Columbia Egg Marketing
Agency.
"There were two main purposes for the
study." Dr. Hill says. ."The first was to
rstahflch with currently used poultry
strains. the rate of egg quality decline from
the nest to the consumer. Secondly. we
wanted to know how much this decline
amid be slowed by oiling the eggs
and cooling them More rapidly and
consistently. With this information it will
be possible to more reliably date- stamp
eggs placed in retail stores."

the eggs were collected and oiled almost as

transported, washed and graded and
stored for periods of 5. 12. 19 and 26 days
before being moved to a simulated retail
outlet and stored in a display cooler.
"Results of tests conducted on the eggs
after this procedure showed clearly that
eggs collected by the ideal method had
superior quality," Dr. Hill says. "Eggs
oiled as laid more nearly retained this
quality through to use by the consumer."
