Pioneer vegetable
soup a hearty meal
A hearty bowl of soup is appreciated
almost anytime as a nourishing answer at
mealtime. Food specialists at the Ontario
Food Council, Ministry of Agriculture and
Food, suggest trying Pioneer Vegetable
Soup. It's a quick and easy -to -make soup
full of fresh, tasty vegetables from
Ontario -onion, carrots and rutabaga.
Serve it at lunchtime, and complete the
meal with oatmeal muffins or rolls, a glass
of milk and an apple. For supper, serve a
generous portion of the soup with a fresh
green salad garnished with leftover strips
of meat, chunks of cheese or chopped egg,
thick slices of whole wheat bread and
mixed fruit with yogurt.
Soup is a super part of the meal. Try this
one soon.
PIONEER VEGETABLE SOUP
1 medium onion, chopped
3 medium carrots, thinly sliced
1 cup sliced celery
2 tablespoons butter, melted
2 cups peeled and diced rutabaga (1/2
medium)
1 cup drained canned chick peas
3 chicken -flavored bouillon cubes dissolved
in 3-1/2 cups boiling water
1 teaspoon crushed basil
1 teaspoon salt
1/8 teaspoon pepper
1 cup milk
Cook onion, carrots and celery in melted
butter in saucepan until onion is soft. Add
rutabaga, chick peas, bouillon and basil.
Boil gently, covered, until rutabaga is
tender (25 minutes). Whirl portions at a
time in blender until smooth; repeat until
all the mixture is pureed. Return soup to
the saucepan; stir in salt, pepper, and
milk; reheat until steaming. Makes about 8
cups.
New Canadian cheeses
with European flavour
Like you, food specialists at the Ontario
Food Council, Ministry of Agriculture and
Food love cheese. No wonder. Cheese is
such a versatile food. It's the perfect
appetizer and adds tasty zip to main course
sauces. It's also a delicious snack. Cheese
is a source of high-quality protein, calcium,
and riboflavin (B vitamin) which contribute
to a nutritious diet.
Next time you shop, stop at the cheese
counter and look at some of the newer
Ontario -made European -style cheeses. If
you like a mild cheese, consider cheddar,
Brick and Muenster, Mozzarella, Colby
and Farmers' cheese, Gouda, Oka or Swiss
(Emmenthaler). For a sharp cheese choose
Camembert, Limburger, Blue or old
cheddar. Other Ontario -made cheeses
include Gruyere, Romano, Provolone,
Parmesan and Ricotta. The availability of
these cheeses depend on the quantities
made and the demand for each type of
cheese.
When buying cheese, read the label. It
will indicate the variety, net weight, and
name and address of the manufacturer,
packer, wholesaler or retailer. It also will
indicate a "best before" date on those
cheeses with a durable life of less than 90
days. This date suggests how long to
expect the unopened package of cheese to
maintain its high quality under proper
storage conditions.
Store cheese in the refrigerator, well
covered. Leave cheese in its original
wrapper. After cutting, overwrap it in foil
or plastic. Grate cheese that becomes dry
and hard and store in a tightly -covered jar
for use in cooking.
With so many Canadian-maded cheeses
to choose from, including the European -
style cheeses with their own distinctive
flavors, there is a cheese for every taste
and purpose.
What's in a name
for meat?
With so many cuts of meat to choose
from, it may be confusing to know how to
cook a particular cut.
Read the label. It indicates important
and useful information say food specialists
at the Ontario Food Council, Ministry of
Agriculture and Food. The label will
indicate either the primal name, referring
to the area from which the cut was taken,
or the secondary name, describing the cuts
within each primal group, or both. Let's
examine beef cuts.
Beef cuts from the chuck (shoulder) area
include chuck short rib, blade, chuck
cross -cut rib and shoulder roasts, neck
