Hearty casserole,
convenient, tasty,
nutritious
Looking for a hearty supper dish to serve
to a hungry family? Try Sausage and Lima
Bean Casserole. It's a dish that will provide
good nutrition and satisfy the hungriest
appetite after a busy day, say the food
specialists at the Ontario Food Council,
Ministry of Agriculture and Food.
Frozen and canned foods are great to
keep on hand -so useful for easy.
convenient meals. Start the recipe by
reaching for frozen pork sausage links,
great on their own or in combination with
other foods, such as in this casserole. Pork
sausage links are a source of protein as
well as other vitamins and minerals.
Frozen lima beans give an interesting
meaty consistency to the dish and are
another source of protein, as well as iron
and other vitamins. Canned tomato sauce
and tomato juice form a delicious sauce
which blend the ingredients together in a
flavorful combination and add a source of
Vitamin C. For a great way to give your
family the best try this nutritious, tasty,
and satisfying casserole.
SAUSAGE AND LIMA BEAN
CASSEROLE
1 Ib. frozen pork sausage links
4 medium onions. sliced
1 green pepper, thinly sliced
1 celery stalk. chopped
2 boxes (12 oz. each) frozen lima beans
1 can (14 oz) tomato sauce
1 cup tomato juice
3 tablespoons brown sugar
1 teaspoon salt
'/z teaspoon dry mustard
1/4 teaspoon powdered thyme
Brown frozen sausages. Remove from
pan. Drain off all but 2 tablespoons fat.
Add and cook onion rings, green pepper
and celery in fat until limp but not brown,
about 3 to 5 minutes. Mix beans with onion
mixture, along with combined retraining
ingredients. Transfer to a 2 -quart
casserole. Top with sausages. Bake
uncovered at 180°C (350°F) for 1 hour. t
Makes 6 to 8 servings.
Tomatoes in a can bring best of value to you
Think of the number of times you reach
for a can or bottle that contains some form
of tomatoes in it: canned whole tomatoes,
tomato paste, tomato sauce, ketchup,
tomato juice, tomato soup, as well as a
variety of prepared products. It isn't hard
to realize why tomatoes have become one
of the most important vegetables grown for
processing, say food specialists at the
Ontario Food Council, Ministry of
Agriculture and Food.
Last summer farmers in Ontario grew
approximately 20,000 acres of tomatoes,
the majority coming from Essex and Kent
counties. The rest come from eastern
Ontario and areas bordering Lake Ontario
and Lake Erie. These areas are best suited
for the growing of top-quality tomatoes.
Tomatoes are grown and carefully
tended over the summer months -and are
harvested in Ontario, beginning in August.
They are transported quickly to the
processing plant where they are unloaded
into water to prevent bruising. Once in the
plant, the tomatoes are graded and
allocated for processing into one or more
tomato products. They may be canned as
whole tomatoes or used to make ketchup.

available is canned whole -pack tomatoes. It
has top priority in the allocation of
tomatoes and only the best ones are
selected to be used for this product. Last
summer, over 48 million cans of
whole -pack tomatoes were canned in
Ontario. The Canada Choice grade on the
label is a good indication that the tomatoes
were most likely grown in Ontario. Of all
the tomato products processed in Canada,
95 percent of the tomatoes used were
grown in Ontario.
