with Piquant Sauce
butterfly pork chops, cut 3/4 inch (2 •
cm) thick, about 5 oz (140 g) each

grated fresh ginger)
• Brush or spray a nonstick or heavy
frypan with oil and place over medium
heat. Add pork chops to pan. Do not add
fat or water and do not cover. Pan broil
for 6 minutes, turn and cook another 5 to
6 minutes or just until juices run clear.
(A slight tinge of pink in the interior will
insure a juicy tender result). Season with
salt and pepper. Remove chops and keep
waComrm.

into pan over medium heat, stirring and
scraping up any brown bits• on bottom of
pan. Boil sauce, reducing by one third.
Serve a spoonful of sauce over each
chop. Makes 4 servings.
