FRESH ASPARAGUS WITH FRESH CHIVE-CREAM DRESSING 2 pounds fresh asparagus 1-inch boiling water in pan 1 teaspoon salt Fresh Chive-Cream Dressing • 'Chopped fresh chives for garnish Fresh lemon slices for garnish Cut or break off asparagus stalks' as far down as they snap easily. Remove scales and wash thorough- ly. Place in a saucepan with boil- ing water and salt, Bring to boil- ing point and boil, uncovered, 3 to 5 minutes. Cover arid continue cook- ing until crisp tender. Drain and serve with Fresh Chive-Cream Dressing. Garnish with chopped fresh chives and fresh lemon slices. Yield-6 servings, ' Fresh Chive-Cream Dressing 3/3 cup sour cream 34• cup mayonnaise 1./r teaspoon salt 1 tablespoon fresh lemon juice 114 tablespoons chopped fresh chives 11, teaspoon powdered dry mus- tard Combine all ingredients In a-sauce- pan, Heat only until Warta. POLONAISE 11/2 pounds fresh asparagus .1 teaspoon salt Boiling water IA cup Soft bread crumbs • cup butter or margarine Fresh parsley for garnish Wash asparagus, renla'e scales, cut Off tough portion of the stalks and discard. Tie asparagus in bundle:5. Stand Upright in the bottom of a detible boiler. Add salt and 1 to 2-filehea boiling water. Cover With the inverted top part of the double boiler. Bring to bell- ing point and boll only 'Until Crisp-, tender, 10 to 12 tairititeS. Retrieve from Water and Serif& with soft bread crumbs 'browned In butter or Margarine, Pour to Mess butter or margarine from the pan over the asparagus. Garnish with fresh parsley,. TOASTED ASPARAGUS ROLLS 12 slices bread 11 stick butter or margarine 2% cup grated sharp 'Cheddar' cheese 1,2 tips cooked fresh large aspara- gus stalks ' 1/§. teaspoon grmirid black pepper 1 cup medium white sauce 1 tablespoon fresh lemon juice Fresh parsley for garnish Trim crusts from bread • slices. and spread each with some of the softened 'butter or margarine. Sprinkle with grated cheese, Cut asparagus tips the length of the bread aliees and place one on each slice. Sprinkle with ground black pepper. Roll up and fasten with toothpicks. ' Place on a baking sheet. Melt remaining butter or margarine and brush over the out- side of the rolls. Bake in a pre- heated hot oven (400 degree F.) 5 minutes or until brown, Mix white Sauce with legion juice and serve over rolls (2 per servings). Garnish with fresh parsley. Yield-6 serving.
