Each year, summer vacations
spell tragedy to hundreds of fami-
lies as accidental drowning takes
the lives of both children and
adults. Next to the highway, the
lake, river or swimming pool is
the most lethal vacation hazard.
Swimming is fun and should be
enjoyed. Safety is of utmost im-
portance, however, and the All
Canada Insurance Federation, rep-
resenting more than 200 Canadian
fire, casualty and automobile in-
surance companies, recommends
these rules for saving lives:
1. Learn how to swim and teach
the children to swim.
2. Do not, swim alone.
3. Unless accompanied by a boat,
do not swim far from shore. Swim
parallel to the shore if you wish to•
try for distance... '
Non-swimmers should not
float into 'deep water on inner
tubes or other inflated articles. If
the float begins to leak the swim-
mer is •in-difficulty,
5. Do not dive into unfamiliar
waters and do not swim beneath
diving ,boards.
6. If .a swimmer is in difficulty;
try to rescue him with a boat, a
rope or an extended bar. Do not
swim to him unless it is absolutely
necessary. Often the rescuer also
becomes a victim, 4
7. At public beaches, swim near
the lifeguard stations. •
8.Wait for at least an hour after
meals before swimming.
9. Beware of undertows in rough
water.
10. Do not swim during lightning
storms.
11. Learn how • to administer
artificial respiration.

For all its talent to make spring
appetites - and ' hearts - beat
high, asparagus is patrician, subtle
in flavor .and texture. A sort of
;lass-with,-the-delicate-air among
vegetables, it even requires its
own special method of cooking. It.
prefers to stand regal and upright
in. the lower part of a double boil-
er, with the boiler's top as cover.
This way the boiling water cooks
the sturdier parts of the stalks
while the steam, with light' touch,
softens the fragile tips to just the
right degree of perfection. , • '
Asparagus' flavor emerges in all
its unique deliciousness when slim
spears gleam simply With melted
butter and a squeeze of fresh lemon
juice, And, of course, fresh as-
paragus is a gourmet's delight
when it's glorified with hollandaise,
cheese or sour cream sauce.
Incidentally, the low calorie
count of asparagus itself (only
about 24 calories to a five-stalk
serving) allows leeway for the
pound-fighter to splurge occasion-
ally on one of these soul satisfying
sauces.
FRESH ASPARAGUS WITH
FRESH CHIVE-CREAM
DRESSING
2 pounds fresh asparagus
1-inch boiling water in pan
1 teaspoon salt
Fresh Chive-Cream Dressing •
'Chopped fresh chives for garnish
Fresh lemon slices for garnish
Cut or break off asparagus stalks'
as far down as they snap easily.
Remove scales and wash thorough-
ly. Place in a saucepan with boil-
ing water and salt, Bring to boil-
ing point and boil, uncovered, 3 to 5
minutes. Cover arid continue cook-
ing until crisp tender. Drain and
serve with Fresh Chive-Cream
Dressing. Garnish with chopped
fresh chives and fresh lemon slices.
Yield-6 servings, '
Fresh Chive-Cream Dressing
3/3 cup sour cream
34• cup mayonnaise
1./r teaspoon salt
1 tablespoon fresh lemon juice
114 tablespoons chopped fresh
chives
11, teaspoon powdered dry mus-
tard
Combine all ingredients In a-sauce-
pan, Heat only until Warta.

11/2 pounds fresh asparagus
.1 teaspoon salt
Boiling water
IA cup Soft bread crumbs
• cup butter or margarine
Fresh parsley for garnish
Wash asparagus, renla'e scales,
cut Off tough portion of the
stalks and discard. Tie asparagus
in bundle:5. Stand Upright in the
bottom of a detible boiler. Add salt
and 1 to 2-filehea boiling water.
Cover With the inverted top part of
the double boiler. Bring to bell-
ing point and boll only 'Until Crisp-,
tender, 10 to 12 tairititeS. Retrieve
from Water and Serif& with soft
bread crumbs 'browned In butter or
Margarine, Pour to Mess butter or
margarine from the pan over the
asparagus. Garnish with fresh
parsley,.

PARTY SANDWICHES
18 cooked fresh asparagus stalks
Yt, cup French dressing
6 slices day-old sandwich bread
3-ounce package cream .cheese; •
1 tablespoon grated Parmesan
cheese
'Pimento strips for garnish
Marinate cold'- cooked fresh, as-
paragus in French dressing; hour,
Drain, Cut crusts from bread
slices, Spread. with Softened cream
cheese Cut :eacii slice into 3- ateip's.•
Cut, asparagus stalks the Same
length,. as the. bread and place one
stalk on each piece. Sprinkle
lightly 'with 'grated Parmesan
cheese. Garnish as desired with
pimento strips. -
Yield-About 6 servings.
TOASTED ASPARAGUS ROLLS
12 slices bread
11 stick butter or margarine
2% cup grated sharp 'Cheddar'
cheese
1,2 tips cooked fresh large aspara-
gus stalks '
1/§. teaspoon grmirid black pepper
1 cup medium white sauce
1 tablespoon fresh lemon juice
Fresh parsley for garnish
Trim crusts from bread • slices.
and spread each with some of the
softened 'butter or margarine.
Sprinkle with grated cheese, Cut
asparagus tips the length of the
bread aliees and place one on each
slice. Sprinkle with ground black
pepper. Roll up and fasten with
toothpicks. ' Place on a baking
sheet. Melt remaining butter or
margarine and brush over the out-
side of the rolls. Bake in a pre-
heated hot oven (400 degree F.) 5
minutes or until brown, Mix white
Sauce with legion juice and serve
over rolls (2 per servings). Garnish
with fresh parsley.
Yield-6 serving.
