The Citizen, 1990-11-21, Page 42Main Courses TURKEY TIPS Before stuffing the turkey put cheesecloth in the bird, then put in your stuffing. When the turkey is cooked, all you have to do is pull out the cheesecloth and all of the dressing comes wiih it, no more digging for all of that delicious dressing. Rub your turkey with mayonnaise instead of butter. Betty Holland RR 4, Clinton. STEWING BEEF CASSEROLE 1 lb. stewing beef 11/2 cups diced potatoes 11/2 cups diced carrots 112 cup diced onions 1 cup diced celery 1 tsp. salt dash pepper 1 tsp. white sugar 2 tbsp, minute tapioca 1 cup V8 juice dash garlic powder (optional) Mix together. Bake in a tightly covered casserole at 250 degrees for four hours. Do not uncover while cooking. Complete meal with rolls and salad. Mary Walden Blyth. CHICKEN WINGS 3/4 cup brown sugar 3 tbsp, dry mustard Place in plastic bag and shake to coat 3 lbs. chicken wings. Remove tips and separate two other pieces. Let stand one hour. Sweet Delights MAPLE SYRUP 3 lbs. of white sugar 1 lb. of brown sugar Take 2 quarts unpeeled potatoes, wash clean, boil until tender. Then drain the water on the sugar. Add 1/4 cup sweet milk and 41/2 tsp. of soda then add one quart of hot water and boil one hour. Keep stirring. Strain through a wool cloth. This makes lovely syrup. Clara Rinn Blyth. HASH BROWN POTATOES 1 big pkg. hash brown salt & pepper to taste onion (any amount) 1/2 - 3/4 cup grated or cubed cheese 2 cans cream chicken soup 500 mis. sour cream 1 /4 cup butter. Mix. WATERGATE SALAD 1 can (20 oz.) crushed pineapple and juice 1 pkg. instant pistachio pudding 11/2 cups mini marshmallows 1 cup walnuts or coconut 1 (9 oz.) carton whipped topping (Cool Whip or Dream Whip) In large bowl mix the first four ingredients. Fold in cool whip and refrigerate for at least three hours. Serves 8-10. Marg Siertsema Auburn. SOUTHERN PECAN PIE Beat: 3 eggs 2/3 cup sugar dash salt 1 cup corn syrup 113 cup butter or margarine, melted Add: 1 cup pecan halves Pour into 9” unbaked pastry shell. Bake at 350 degrees for 50 minutes or till knife inserted half­ way between centre and edge comes out clean. Cool. CHICKEN FRIED STEAK 2 lb. round steak Pound steak well. Cut into pieces and salt and pepper each. Beat two eggs with 1 tbsp, water. Dip steak pieces in egg and roll in fine bread crumbs and fry till browned in olive oil in frying pan. Put pieces as browned into roast­ ing pan with one onion sliced, one cup mushroom pieces [fresh or canned). Add: 2 cups of beef bouillon or beef cup of soup mix Cover tightly and bake 350 degrees for one - two hours until tender.
