Place 2 egg whiteS and cup soft butter or shortening in a cup, Fill measuring cup with milk at room temperature. Add 1.i: tsp, almond extract, 2, Sift cake flour and measure 134 cups into a sifter and 1. 1/2 tsps. baking powder, 1/4 tsp, salt. Sift dry in- gredients into a bowl. Make a well in the centre and pour in contents of the measuring cup, 3. Beat with a rotary beater for 5 minutes, scraping sides down 2 or 3 times with a rubber scraper or beat for 2 minutes with an electric mixer, Grease bottom only of an 8 by 8 inch cake pan, Turn batter into pan and bake for 35 to 40 minutes in preheated electric oven of 350 rug. 5, Cool and frost with ,Sea Foam Icing, 1, Preheat oven to the correct tem, perature. Mahe sure top heat has been off for ten minutes before cake batter is put in the oven, 2. Grease cake pans with salt-free dripping. Melt the fat and dip a. piece of paper on the surface of the fat for greasing pans, This prevents cake from sticking to the pan, 3. If you are using the electric mix- er, the motor must be turned to slow or No. 1 speed as the sifted, dry ingredients are added quickly but evenly, Mix only until flour dis- appears, using the rubber scraper to finish mixing, 4. Do not try to bake a square cake in less than 45 to 55 minutes at a constant temperature of 350 deg. Test the cake with a toothpick to Feather Cake 2 eggs 1 cup sugar 1 cup cake flour 1 tsp. baking powder Mr. tsp. salt 1/2 cup milk 1 tbsp. butter 14 tsp. cocoanut flavouring Grease an 8 by 8 inch cake pan. Sift and measure flour. Mix and sift dry ingredients, Melt butter and heat milk• at same time in double boiler. Beat eggs until light. Gradually add beaten eggs to milk. Stir in flavoring. Stir milk mixture into flour. (This is a very thin batter.) Pour into cake pan and hake in preheated electric oven of 350 degrees for 35 minutes. Invert to cool but do not remove from pan. (This makes a higher cake in a 7 by 7 inch pan,) Feather Icing 4 tbsps. brown sugar 3 thsps, soft butter 1 tbsp, cream Cocoanut Cream butter and sugar - together. Place in oven under broiling ale- . ment to brown. for 1 minute. Re- move from oven and cool gradually; then blend in the cream. Spread on cake and sprinkle with cocoanut. THE QUESTION BOX Canadian Maple Cake 1,r cup butter or lard 1/2 cup maple syrup cup brown sugar 2 eggs 2 cups pastry flour 2 1/2 tsps. baking powder 1/4 tsp. baking soda 1/3 tsp. salt cup milk Cream butter, blend in maple syrup and sugar. Beat in the eggs. Sift flour, measure and resift 3 times with baking powder, soda and salt. Add dry ingredients alternately with i milk.
