The Exeter Beaver Colony g
wound up the first half of
their season Wednesday, ,
with.a Family Christmas Pot
Luck Dinner, with the help of
Marie Nethercott as
organizer and served
beautifully by Exeter Path-
finders.
Following dinner the
Beavers entertained their
families with Christmas
songs and selections on the
piano.
In addition to the Beavers
on the programme were;
Becci Farquhar, Terra
Ahrens and Darren Tinney.
Master of Ceremonies for the
programme was Beaver
Father and Group Com-
mittee Secretary Mike
Cregan.
Dwayne Tinney, president
of the Group Committee led
the gathering of 130in a carol
sing. At the close of the
evening all children received
a treat.
Beaver gatherings will
resume January 8, 1981 with
many fun things in store for
them.

The Christmas turkey
should Ile a joy to eat, not a
possible source of discomfort

Food, Poultry of any kind is
a perishable food and needs
to be treated with care.
Whether a frozen bird is
thawed in the refrigerator,
at room temperature, in cold
water, or in a microwave
oven, the original vacuum-
sealed bag should be left on
so the meat is protected from
any source of contamination,
" Refrigerate it'as soon as it
is defrosted and cook within
24 hours.
A fresh turkey, on the
other hand, should be
removed from its original

wrapper and covered with a
loose tent of foil or waxed
paper. Store the giblets
separately from the bird and
keep both in the coldest part
of the refrigerator for no
more than three days.
For safety, never stuff
poultry in advance. Don't
even mix up thedressinguntil
just before roasting. Any
equipment such as a knife or
cutting board used with the
raw turkey needs to be
thoroughly washed with hot,
soapy water before it
touches the cooked bird.
After the turkey has made
its impressive appearance
on the Christmas dinner
table, removing, the stuffing
from both amities and
refrigerate, It's wise to
freeze any that can't be used
within three days. At sub-
zero temperatures, it will
keep for two months.
Chill the turkey as quickly
as possible after the feast.
Keep it snugly covered with
foil in the refirgerator for up
to four days. Freeze
any remaining turkey.
Remove the meat from the
bones and wrap meal-size
portions in foil or plastic,
according to the size of the
pieces: slices, chunks, and
tidbits, When the meat is
frozen in this way, it should
be used up by the end of
January, If it is covered With
gravy or broth, it will retain
its quality for about three
months.
A big bird is often a better
buy . The ratio of meat to
bone is higher and the price
is frequently lower, but it
can mean that a con-
siderable amount remains
after the Christmas dinner.
If the turkey is treated with
care, before and after
roasting, the leftovers will be
as safe and enjoyable as the
feast,
