5 tbsps. fat
I. large sprig parsley, or minced
onion
1 tsp. salt
Pepper
c. pain, meat stock. or water
2 tbsps. flour
Cut meat into pieces suitable for in-
dividual' service. Wipe meat with a
damp cloth and pound with meat ham-
mer, season, and on each piece of meat
Place dab of fat mixed with parsley
or onion. Roll and tie each with string.
Sear rolls in remaining fat. Rinse
pan with a little hot water or stock
and cook over a slow fire for about
1% hours, or until meat is tender. •

Hello Homemakers! St. Valentine
drops his arrow on Sunday this year
-a home day for most of us and
week-end leave for many in uniform.
Don't forget that home is a treasured
place to those on active service and
those from distant places are eager to
learn whether we do things like their
folks. So do invite them to your home
if you can,
How about an afternoon buffet
luncheon? For late risers - and that's
most of us - it's easier. Planned be-
:forehand, it will not take long to pre-
pare and there will be more time for
visiting. The family, too, will like
some Valentine Day atmosphere.
So with hearts for shape and red
for colour, see how you can contrive
a festive effect without expense. At
one end of the table stack the plates,
arranging the silver in rows on each
side of them; put your tray of cups
and saucers at the other end. Food
for the main course is placed near the
plates, and the dessert near the dessert
dishes at one side; on the other side,
butter-crisp rolls or Vitamin B bread.
When it's time for food - everyone
gaily helps himself, You'll wind up
by saying, "Well, it was a Valentine
party, wasn't, it?"

TAKE A TIP:
1. The appetizer will be tomato juice
with a squeeze of lemon juice in it
and just for to-day serve a few can-
apes with each glass (spread crack-
ers with pimento cheese and pickled
onion slices).
2. Glorify the main course - kidney
bean casserole with a bowl of crisp
green tossed together with tart
dressing. A 'new idea is to make
up a corsage for each guest. Using
small lace doily, stick in match-thin
pieces of carrot, buds of radishes,
florets of cauliflower, slivers of
turnips and sprigs of parsley. Per-
fume with salt before placing on a
plate or wooden tray.

RECIPES
Marble Cake
2 cups all-purpose, flour, 21/2
tsps. baking powder, 1/2 tsp, salt,
1/2 cup shortening, 1/2. cup sugar,
1/2 cup corn syrup, 2 eggs, 56.
cup corn syrup, 2 eggs, 1/2 cup
milk, 2 tsps, red coloring, IA tsp.
lemon extract.
Sift flour, measure; add baking
powder and salt; sift again. Cream
shortening, add sugar gradually, beat
until light and fluffy; add flavouring.
Add syrup gradually and mix thor-
oughly; blend in well-beaten yolks.
Add dry ingredients alternately with
milk and flavouring, beating after each
addition. Fold in stiffly beaten whites;
divide batter; add red coloring to one
part. Put batters in greased pan by
spoonfuls. Bake in electric oven at
350° for 40 minutes.
Victory Frosting
1 egg white, 1/2 cup corn syrup,
2 tbs. sugar, 1/4 tsp. cream of tar-
tar, 1/2 tsp. salt, 11/2 tsps. vanilla.
Combine egg white, corn syrup,
sugar, cream of tartar and salt in top
part of double boiler. Mix thorough-
ly. Place over rapidly boiling water
and beat constantly until mixture holds
a peak (about 7 minutes). Remove
from heat; beat until cool and thick
enough to spread. Makes enough
frosting for top and filling of two 8-
inch layers.
Apple Cup Salad
Core the apples. Scoop out pulp
to make apple cups. Fill a bowl with
cold water and as each apple cup is
made put the cup in the water. Dice
enough celery to equal one-half apple
pulp. Mix celery and apple pulp with
1 cup cottage cheese or cream cheese.
Blend with salad dressing. Dry apple
cups and fill with mixture. Serve on
crisp bends of lettuce.

Mrs. G. G. asks: "Is,,it possible to
make the Butter Spread with only
whole milk instead of evaporated
milk?"
Answer: Yes, soften the 1 lb. but-
ter and gradually beat in 1 pint of
milk and 1/3 tsp. salt. It will take
longer to beat.
MrS. M. M. asks: "What can you
do with 'rubbery' beets?"
Answer: Soak in cold water over
night. Shred on a grater and cook
in enough water merely to cover.

Fuel rationing coupled with severe
cold is responsible for those quaint
and cute, those warm and comfy
nightgowns cited as best-sellers in
many sections of the country. Here's
a typical model fashioned of a frabic
that looks like gossamer but is a
sheer spun nylon and rayon combin-
ation. Styled with Victorian looking
ruffles at the round neck-line, down
the front of the bodice and at the
wrists of the long full sleeves. Tiny
pearl buttons close the bodice.

salted water until tender,. drain,

Plain Gingerbread
1 c, dark molasses • 1 c. sour cream or milk
1 egg
1 tsp. soda
A little warm water
tap,. salt
1 tsp. ginger
21/2 c. flour
Beat egg, add molasses. Dissolve
soda in ward. water. Sift flour with
salt and ginger, and add alternately
with cream or milk, add dissolved
soda. Make at 350 degrees F. for 40
Minutes, and serve warm. •
ANCIENT EGYPTIAN WEAPONS
Ancient weapons displayed in the
Royal Ontario Museum's Egyptian
galleries are a far cry from those of
the present struggle. Stone maces
from the prehistoric period bear wit-
ness to invasion from weSterit Asia,
Bronze weapons include battle-axes of
curious forms, royal daggers with in-
laid or gilded hilts, and a sword with
engraved blade.
The picture of war presented by
these weapons is supplemented by
wooden models of bowmen and spear-
men created to guard the royal mum-
my. A bowman pictured on a pre-
historic vase, uses a bow and arrow
which is similar to actual specimens
of a later period 'on display in the gal-
lery, . Relief sculptures which decor-
ated temple walls depict soldiers arm-
ed with battle-axes and shields. A
study of these early tools of war
emphasizes the stupendous change in
armament .from past to present.
CORALS OF THE' SOUTH
PACIFIC
Corals ,samples of which are on
view at the Royal Ontario Museum,
have helped to shape the globe. The
southern Pacific war zone is dotted
with islands and reefs of coral. 'rink
are not only a menace to navigation
but hiding places for enemy craft.
Although many are pin points on the
map, the Great Barrier reef fringing
the east coast of Australia extends for
more than one thousand miles. Big
and small, the coral islands are made

You need very little time, money or
equipment to prepare a few 'unusual
dishes that fit into the Valentine menu
even in war times. Here are some
suggestions. The first is illustrated.
The Orange Sponge Cake may be
baked in heart Shapes, Iced with pink
orange butter icing, and the edge
decorated with tiny red heart candies,
Caeli recipe is an aid to Valentine
party success.
Valentine Rennet-Custard
cups milk, not canned
1 package raspberry rennet powder
Butter cookie dough
'White uncooked icing
Set out 4 or 5 individual dessert
glasses. Warm milk slowly, stirring
constantly. Test a drop on inside of
wrist frequently. When COMFORTA-
BLY WARM (110° F.) not hot, re-
move at once from heat. Stir rennet
powder Into milk briskly until dis-
solved - not over 1 minute. Pour
at once while still liquid into dessert
glasses. Do not move until firm -
about 10 minutes. Chill in refrigerator.
Meanwhile, roll out butter cookie
'dough and cut oat with a scalloped
cookie cutter somewhat larger than
the top 6f the dessert glasses. Cut out
the center of each cookie with a heart-
shaped cutter. (Heart-shaped cookies
may be -baked and served with the
rennet-custards.) Bake the cookie-
rims and when cooked, decorate with
white icing put on with the point of
the pastry tube having one or two
i3mall holes to make a lacy effect.
Just before serving, lay a cookie-
rim over the top of each glass of
rennet-custard so the pink surface of
the dessert shows through the heart.
Makes 4 or 5 servings.
Party Souff16
1 tablespoon minced onion
1 tablespoon finely cut green
2 tablespoons butter
112 cup cooked peas
,3y cup cooked diced carrots
3 tablespoons quick-cooking tapice.
1 teaspoon salt
111,13 teaspoon pepper
,3h cup finely cut celery
1 cup milk
3 egg yolks, beaten until thick and
lemon-colored
egg whites, stiffly beaten
Cook onion and green pepper in
butter until tender but not browned;
add peas and carrots. Combine quick-
onrikine• tapioca. salt manner. celery.

in greased ramekins in moderate oven.

them as company dishes used to be,
their temperamental tendency to slump
without warning before the eyes of the-
guests. Nowadays, by using quick-
cooking tapioca, even a. beginner cook
can count on serving a perfect souffid
every time. The tapioca acts as a
binder and provides dependable insur-
ance against failing.
Orange Sponge Cake
egg yolks, beaten
14 cup orange juice
1 tablespoon lemon juice
14 cup sugar
14 teaspoon grated orange peel
Beat well. Fold in, in order given a
2 egg whites, stiffly beaten
1 cup flour, sifted with •
14, teaspoon soda
Bake in moderate oven (325° F.)
35.40 minutes. Cover with whipped.
cream. Top with orange sections.
Orange Butter Icing
Cream together, using more juice or
sugar as needed for proper consistency t
2 cups powdered sugar
8 tablespoons butter.
2 tablespoons orange juice
2 tablespoons lemon juice
1 teaspoon grated orange peel
Tint with pink food coloring.
Valentine Party Milk Shake
3 cups chilled milk
- 3/4 to 1 cup decaffeinated coffee
sugar or syrup to taste
Shake well and pour over crushed'
ice. Serves 4. Remember that de-
caffeinated coffee, if percolated, needs
"perking" from 18 to 20 minutes,
slowly and gently, to bring out its full,
rich flavor. Decaffeinated coffee that
is carefully brewed will satisfy the•
most exacting epicure and give every-
one a chance to relax taut nerves and'
get a normal quota of rest. This milk
