The responsibility of the
Ontario Bean Producers'
Marketing Board in fulfilling
obligations on bean sales
generated considerable
discussion at Friday's annual
meeting for Huron growers at the
P ineridge Chalet at Hensall.
Manager Charles Broadwell
said the board had made forward
sales of 815,300 hundred weight
of 1977 crop white beans by
August 31 and another sales
agreement for 38,000 hundred
weight were made with Ontario
bean dealers.
In turn bean dealers made sales
to brokers and processors on the
expected crop and are now unable
to fill the orders.
Due to the wet fall weather, the
bean harvest was badly curtailed.
Broadwell said only 819,000
Vegetable proteins, processed
from oilseed crops, may prove to
be the answer to one of the
biggest nutritional shortages
facing the world, says 'Dr. Dave--
Stanley, food scientist ' at ,,-kKe
Ontario Agricultural College,
Guelph.
Dr. Stanley says constraints on
agriculture combined with
increasing population will create
a demand for less eiwensive and
more efficient sources of protein.
"The cow, a traditional source
of meat protein, require '10
pounds of vegetable protein to
produce one. ,pound of meat
protein . "
Developing' meat analogs or
meat extenders from oilseed
crops,such as rapeseed or
soybeans, not only will help
extend Meat 'supplies in the
future -but also will provide new
markets for Canadian oilseed
crops.
'Using soybeans, meat analogs
hundredweight had been
delivered by Ontario growers,
creating a shortage of 34,000
undredweight.
Broadwell said the, board has
received legal opinion that they
are not "legally liable for
commitments to forward sales
made."
Frower Ed. Krauter
suggested the producers and the
board accept the moral liability
and supply the beans to "bail the
dealers out."
He said "If we fail to come
through in this crisis it will hurt
the bean industry for years."
Ed.' Dearing of Perth county
agreed that the board had a moral
obligation.
Broadwell countered "we
could possibly be held respon-

oil or margarine.
The remaining soy grits or soy
meal aee introduced to -the
extrusion process in which soy
protein is exposed to heat and
pressUre.
"During this part of the
process any anti-nutritional
factors are inactivated and the
molecules are rearranged so that
you get a product which has a
chewy meat-like texture."
While vegetable protein does
not rank as high in nutritional
value as traditional animal
protein, it is still a good source of
protein.
The meat analogs, because
they have low moisture content,
can be stored without refrigera-
tion or preservatives.
Another use for meat analog is
as meat extender.
"It will never replace the beef
steak but it can be used to extend
low-grade hambuijger. This
product, marketed as soy burger,
was introduced to the market
several years ago when beef
prices. were higher. ,
Dr. Stanley is now -loOking at
the effects of processing on
protein, molecules in the hope of
improving 'efficiency and quality
of this source of protein,

Broadwell were concerned with
the lack of suitable beans needed
for 1978 planting. Broadwell said
he thought only about one-half of
the ecessary seed is now
available. He added, -"again it
depends on the amount of quality
of beans still on the farms,''
Hein-lilt Loewede of the Ontario
Croppisurance Commission said
more than 7 million dollars has
been paid to date for white bean
claims.
Helmut said about two thirds of
white bean farmers were covered
by insurance paying premiums of
seven million dollars. The same
amount is paid by the
government.
The insurance man said he
expected all claims, would be
completed in the next three weeks
and should reach close to 10
million. He added "the amount of
claims ,tells us what kind of year
you had."
He said insurance premiums
could 'be up by about 25 per cent
for 1978 crops. The premium this
past year was in the range of
$5.50 per acre depending on the
