Anything That's Butternut squash has an elongated pear shape and a smooth, creamy yellow skin. Underneath you'll find a bright orange, fine-grained flesh (smoothest of all the squash) with a full rich flavour. Butternut squash are available until February and one large squash yields 6 to 8 servings. Buttercup squash, with their orange or dark green skin, are easily identified by the turban- shaped cap at the blossom end. The. flesh is fine-textured and though very dry, has a sweet flavour. Available until December an average size buttercup squash serves four. - Hubbard squash are the largest member of the squash family and are often sold. in pieces or chunks at the-store. The rind is .very hard, ridged and warted and may range in colour from dark bronze-green to orange-red. The flesh is orange-yellow and sweet. Hubbard squash are available until mid March and one small or 1/2 large squash yields 6 servings, Squash may be baked, broiled, pressure cooked or steamed. A duck roasted and prepared with sauce to pour over it was sampled by members. He also prepared pepper steak using rib eye steak which also was eaten. Mrs. Jane de Vries and Mrs. Marie McCutcheon were conveners for this part. The president opened the meeting with a verse "Merry Autumn Day" and a thank you letter was read from Mrs. Elsie Miller. Achievement Day is to be held at Grey Central School Dec. 3rd and W.I.courses "choosing and using fabrics " are set for November 16th at Ethel Community Centre. Brussels and Cranbrook are to be in charge of the birthday party at Huronview on Oct. 26 when 23 gifts and 14 doz. cupcakes will be needed as well as a short program. Gifts .of plants and homemade candy are being donated as well as the cupcakes. Anyone who can help is asked to call Mrs. Doris McCall . It was agreed not to make a donation to the C.N.I.B. The annual W.I. Bazaar is to be held in Brussels Library on Nov. 12th. Volunteers in charge are - Bake Table - Mrs. J. de Vries; Produce, Mrs. Ruby Stiess; Nearly New - Mrs. Wilma Hemingway; Crafts, Mrs. Eleanor Hemingway; Candy, Mrs. Leona Armstrong; Tea room, Mrs. J. Van Vliet; Kitchen, Mrs. Peggy Cudmore; Advertising, Mr. .1. Turnbull and Mrs. Wilma Hemingway. Mrs. Amy Speir will lay the W.I. wreath on Nov. I 1 th at the Cenotaph. A decision on whether to enter a project in the contests was deferred. In general,. a squash that is heavy for its size has firm and solid flesh. The rind should be firm, unbroken, and free from soft spots or damage. One of the most popular of the winter squash is the acorn or pepper variety. Acorn squash, resembling the nut of the same name, is excellent for baking. The motto "Eating is a must but cooking can be enjoyable" was given by Mrs. Jane de Vries. Mrs. de Vries thanked the speakers and soloists and presented gifts.
