When you are looking for an
inexpensive , nutritious and tasty
vegetable to serve with a meal,
don't forget the carrot, Carrots,
which are available all year,- are
an excellent source of Vitamin A
and supply valuable minerals.
And, as a bonus, they are low in
calories,
When you buy carrots, look for
the firm, smooth and well-shaped
ones. Make sure that they show
no signs of decay. Remember,
too, that the deeper the orange
color of the carrot, the more
Vitamin A it, contains, Store
carrots in a cool room in your
basement or in your refrigerator
in perforated plastic bags. One
pound of carrots will serve four
people.
To cook carrots, use only a
small amount of water and a
covered saucepan for best flavour
and color and a minimum of
nutrient loss. Serve them "crisp
tender", alone or with other
vegetables. Carrots are alSo
delicious raw or baked in a
casserole.
Onions are another vegetable
in good supply year round. They
add that touch of,izest to soups,
salads or casseroles. Onions can
also be cooked alone, baked or
screamed.
When you're buying onions,
check , for firmness, good•
formation and shiny, dry crackly
skins. You can buy them in plastic
or mesh bags in 2, -3, 5, 10 pound
sizes , larger. Look for the
Canada No. 1 grade mark to be
assured of good quality.
Store onions in a cool, dry airy
place and they will last several
weeks.
Onions may be stored up to a
year if they aro frozen at 0°F. To
freeze, peel the onions, the
them and pack them in measure
amounts. Before cooking them
allow 90 minutes for thawing, an
use them in recipes which us

Onions Au Gratin
3 cups sliced onion
2 tablespoons flour
1/2 teaspoon salt'
Dash, pepper
1'/2 cups (6 ounces) grated
cheddar cheese
Ell tablespoon butter
1 tablespoon water
2 tablespoons buttered bre
--crumbs:
Arrange 1 cup onion in grease
baking dish. Mix flour an
seasonings. Sprinkle 1/3 floc
mixture over onion, then sprink
with 1/2 cub cheese. Repe
layers twice. Dot with butter; ad
water. Bake covered at 350°
until tender (about 11/1 hours
Uncover, sprinkle With crum
and return to oven until brow
(about 10 minutes more).

Carrots A ta Pomme
31/2 cups cubed carrots
2 1/2 cups sliced apple
1/2 cup sugar
1/2 teaspoon paprika
2 tablespoons butter
Boil carrots until tend
Combine carrots and apple ai

Sprinkle with sugar and paprik
Dot with butter. Bake 30 minut
at 375°F, stirring occasionally
