that no child past the age of 10
months should take a bottle to
bed. Such a bottle is not
necessary nutritionally and

Batter
2/3 cup all-purpose flour •
1/4 teaspoon salt
1 tablespoon sugar
4 beaten eggs
1 1/2 cups milk
Z tablespoons butter, melted
Butter for frying.
Mix dry ingredients. Add

A lot of people who think they
don't like variety meats 'have
probably never tasted them.
Usually they have never tasted
them because they don't know
how to prepare and serve them.
Kidneys, for example; are a
popular ingredient in steak and
kidney pie, kidney stew and
mixed grill in many restaurants,
but they are commonly over-
looked at the meat counter for use
at home. However, this highly
nutritious and economical meat
provides a distinctive flavor and
an interesting variation for meals.
As an incentive to make the
decision "to buy", Food Advisory
Services, AGriculture Canada
offers some helpful suggestions
for preparing and cooking kidney.
Beef and veal kidneys have a
lobed appearance, while pork and
lamb kidneys are smooth, all-in-
one-piece and bean-shaped. Just
as they differ. in appearance,
they differ in flavOr and
tenderness and require different
methods of cooking.
To prepare kidneys for cooking,
remove the membrane and cut
lobes away from the fat and tubes
with sharp pointed scissors. ,Cut
kidneys crosswise in 1/4 - 1/2 inch
slices or pieces. They may be cut
in half lengthwise for panfrying or
broiling. Beef and pork kidneys
are stronger in flavor and may
be soaked in cold, salted water (1
tablespoon salt to 4 cups water) or
marinated in a savory dressing. in
the refrigerator for an hour before
cooking. They are best covered
and braised or stewed. Lamb and
veal kidneys are more tender and
milder in flavor and should be
cooked briefly, either broiled,
panfried or lightly browned and
braised for a few minutes in a
flavorful sauce.
Remember that kidney will
become tough if overcooked and
for the best color, brown a small
amount at a time.
When buying kidney allow
approximately one-third of a
pound per serving.
One delicious way of serving
kidneys is to combine them with a
Variety of vegetables and serve
them over bOtered ttedclles. Try
the vegetables suggested
in "Kidney and Vegetable
Medley" or substitute your
favorite.
Kidney and Vegetable Medley
1 1/2 pounds pork kidney
2 cup sliced 'onion
2 tablespoons butter
1 tablespoon soya sauce
1/2 teaspoon salt
1/8 teaspoon pc:pper
1/2 cup sliced celery
1/2 cup thinly sliced carrots
1 10-ounce can mushrooms
3 cups cooked egg noodles
Remove membranes from
kidney and cut in '/s-inch slices.
Saute kidney and onion in b utter
until onion is transparent. Add
remaining ingredients except
noodles. Saute until vegetables
are tender, (about 10 minutes).
Serve over noodles. 6 servings.

What is meant by the term
"nursing bottle mouth?"
A baby's teeth can suffer r cal
damage if he is regularly put to
bed with a nursing 'bottle filled
with sweetened fruit juice,
formula or other sugared
beverage.
Drinking from a bottle at
mealtime does not cause harm to
the teeth but prolonged nap and
nocturnal nursing can be very
damaging to erupting teeth.
When a child nurses while
awake, the liquid is swallowed so
that the time it is in contact with
the teeth is limited. But when he
nurses in bed, the tongue and
nipple pool the liquid around the
upper front teeth and at the same
time can protect the lower front
teeth.
Certain bacteria change the
sugar that is present in
sweetened juices into decay
causing acids. The longer the
practice is continued, the more
damage will be done.
Most of the teeth of a child with
this condition are severely
decayed. Because of the child's
young age, it is usually extremely
difficult, if not impossible, to
restore the teeth.
To diagnose a problem of this
nature, the dentist may request a
complete history of the child's
eating and nursing habits. But
