held their regular meeting in the
Lodge rooms. There was a good
attendance. The meeting was
conducted by the Noble Grand,

Plans were completed for the
Dessert Euchre Monday,
February 10th. Several members
offered to h - elp the lunch
committee. Several members had
birthdays and received greetings.
After a short fashion show the
members were treated to a
delicious smorgasbord lunch by
the lunch committee.
Dental
program
year long
This week is Dental Week but
according to Mrs. Gurpal Th ind
of the Huron County Health Unit
a dental program is in operation
year round in the county.
Mrs. Thind says that children
are shown how to brush their
teeth at about age 3 when they
attend the Health Unit's Child
Health Clinics. Their dental
health is then checked every six
months or year and their teeth are
brushed with flouride at their
pre-school' screening.
Children in the county's
schools from Kindergarten to
G rade 8 are visited once a year
by a public health nurse who
discusses dental techniques and
nutrition and explains what goes
on in a dentist's office, Mrs.
Thind says. The nurse also shows
films on brushing and how to floss
teeth.
Flouride is also applied to the
children's teeth once •per year.
"It helps but education is more
important in preserving teeth,"
according to Mrs. Thind ,who is
director of public health nursing
for the Unit.
This year the Health '•Unit is
running a county-wide program
teaching children in Grade 6 how
to floss their teeth.

Cheese sauces have long been
a fait hful standby used to dress
up vegetables and other dishes.
Recipes for this type of sauce are
extremely varied depending on
the type of cheese or milk used. In
view of this, Food Advisory
Services, Agriculture Canada,
have conducted a study on several
different cheese sauces on the
basis of cost and preparation
time. 'Taste panels were held to
determine preferences.
Sauces were made with the
following ingredients:whole milk,
grated medium cheddar cheese
and seasonings; skim milk
powder, grated medium cheddar
cheese and seasonings; whole
milk, shredded process cheese
and seasonings; evaporated milk
and shredded process cheese.
The most economical sauce was
the one made with skim milk
powder and cheddar sauce
follOwed closely by the whole milk
and cheddar cheese salted. The
cost for the process cheese sauces

was almost double that of sauces
made from grat ed cheese.There
was little difference in
preparation times which ranged
from 15 to 19 minutes.,
Comments of taste panelists
indicated that sauces made with
either whole milk or skim milk
powder and grated cheese had
the greatest degree of
acceptability. Not only were they
the most economical, they were
also the most flavorful and the
most acceptable in consistency.
CHEESE SAUCE
(With skim milk powder)
3 tablespoons butter
3 tablespoons flour
'/2 teaspoon salt
Dash pepper
1 IA cups water
I/2 teaspoon dry must and
Dash cayenne
'/2 to 3/4 cup skim milk powder
1 cup (4 ounces) grated inediutri
cheddar cheese
Melt butter, blend in flour,

seasonings and skim milk
powder. Gradually add water. Stir
and cook until smooth and thick.
Add grated cheese and stir until
melted. Make about 1'/i cups
medium sauce, enough for 6
servings of vegetables.
CHEESE SAUCE
2 tablespoons. butter
2 tablespoons flour
1/2 teaspoon salt
1/2 ' teaspoon dry mustard
(optional)
Dash paprika .
Cash cayenne
1 1/4 cups milk
0/4 to 1 cup grated medium
cheddar cheese
Melt butter ; blend flour and
seasonings, Gradually. add milk
and, cook, stirring constantly,.
until thickened,, and sauce is
cooked (about 5 .minutes): a dd.
cheese and stir until'
Makes. about .P/2,, cups niediutn.
