The 'process'
in processed
cheese
Processed and "natural" or
ripened cheeses are very simi-
lar in composition and nutritive
value, even though flavor and
cooking quality are different.,
say food specialists.
Processed cheese is made
from natural or ripened cheese.
Processed Cheddar is likely most
familiar. Processed Swiss and
Gruyere are also commonly
available. To produce processed
cheese, a ripened cheese with
a well developed flavor (such as
a sharp Cheddar) is blended with
a small amount of water and a
salt that acts as an emulsifier.
This results in a softer cheese
that slices easily and melts read-
ily, blending smoothly when heat-
ed for sauce.
The cheese mixture is also
heated in its processing, pre-
venting the development of a
sharper flavor, and resulting in
the mild flavor characteristic of
processed cheese.
The composition of natural
cheese is changed very little.
Only small amounts of water and
emulsifier are added. (process-
ed cheese, depending on the type
of emulsifiers added, may be
higher in sodium or potassium.)
Both cheeses are highly concen-
trated forms of milk(it takes
approximately 10 pounds of milk
to make 1 pound o f cheese), and
are good sources of protein, cal-
cium, and vitamin A. Natural and
processed cheeses are both good
substitutes for meat as sources
of protein.
