Local Briefs Mrs. M. Ballantyne was a visitor with Mrs. Wm, H. King Sr. in Morris Township last Thursday. • Congratulations to Art Henry who reached his 85th birthday last Thursday. Mr. Henry enjoys good health. Jack Logan, son of mMr. and Mrs. Alvin Logan, has accepted a postion in Calgary. Mr. and Mrs. David Kennedy • and son Michael were Sunday visitors with their parents, Mr. and Mrs. R. W. Kennedy. Mr. and Mrs. Murray Huether and Joan visited in Toronto on Saturday with Mrs. G. McDonald and Mrs. J. Mc-Gale after attending the Gradna-tion Exercises for Joyce in Guelph on Friday when she re-ceived her R. N. Degree from St. Joseph's School of Nursing. Mr. and Mrs. Harold Chap-man of Kitchener were week end visitors with Mrs. J. W. Fischer and other relatives for the holi- day week end. Mr. and Mrs. George Chap-man of Britain were Sunday visi-tors with Mrs. Geo. Chidlow. Mrs. M. Vodden of London visited with her mother, Mrs. Jas. Kerr during the week end. Jac McWhirter is a patient in Wingham and District Hos-pital. Mr. and Mrs. Louis Ebel and family of Ingersoll were holiday week end visitors with Mr. and Mrs. Jack McCutcheon and other relatives. Miss Colleen Durst of Walkerton visited last week with her grandparents, Mr. and Mrs. Harold Thomas. Mr. and Mrs. Harper Wood of Mitchell were visitors on Tues- day with Mrs. G. Chidlow who has not been enjoying her usual good health. Miss Gail McWhirter, London, visited at the home of her parents, Mr. and Mrs. Jack Mc-whirter during the week end. A few friends called at the home of Miss Hattie Downing on May 18th on the occasion of her 88th birthday. LEFTOVER TURKEY FREEZES Leftover cooked turkey should be used within 2 to 3 days, but if properly packed and frozen, It can be stored 1 to 2 months. In this way, leftovers which add monotony to holiday meals can add variety in January. Cool leftover turkey as quickly as possible after dinner, advise food specialists at the Ontario Food Council, Ontario Department of Agriculture and Food. This applies whether left-overs are to be frozen Immedia-tely or refrigerated for use next day. Remove bones and excess fat. Keep meat in large slices as they retain moisture better than small slivers of meat when frozen. Freeze leftover dress-ing separately. Seal in freezer bags or heavy foil, excluding as much air as possible.

BOARD OF EDUCATION.
I have examined the Balance Sheet of the Huron County Board
of Education as at December 31, 1971 and the Revenue Fund State-
ment of Revenue and Expenditure and the Statement of Source
and Application of Capital Funds for the year then ended. My exam-
ination included a general review of the accounting procedures and
such tests of accounting records and other supporting evidence as
I considered necessary in the circumstances.
In my opinion these Financial Statements present fairly the
financial position of the Board as at December 31_ 1971 and the
results of its operations and the source and application of its capital
funds for the year then ended, in accordance with accounting prin-
ciples generally accepted for Ontario School Boards applied on a
basis consistent with that of the preceding year.
