PICKLING HINTS
U»* Only fresh top-quality vegetable*, tort out
sizes, and follow a reliable recipe. A mixture of half
clder/half white vinegar will give a good flavour,
but remember that elder or malt vinegar will alter
the colour and flevour. Produce euch a* silver akin
onions and cauliflower are best pickled In clear
vinegar.
Use only pickling salt, because table selt may
cause cloudiness In pickle*. Calcium chloride
(from drugstore) Increase* crunchin*** of pickle*.
Use 1/3 per gallon of pickling solution.
Fresh whole spices are best for flavour and colour,
and should bo removed before pickle* ar* |arr*d to
avoid discolouration.
