Mrs. Elizabeth Davis spoke on Joy and Thanksgiving, drawing from the Psalms where God directs His people to be joyful and filled with thanksgiving. She said people in Exeter and surrounding area should be very thankful for the way God blesses them. Mrs, Davis drew attention to the fact that although Exeter had undergone floods, 'heavy snow falls and blizzards, ice storms and a tornado in the last few years, there had been no loss of life or serious injury. For another, they are good for eating fresh, out-of-hand, but best of all, they freeze beautifully and oh! so easily, When you land home with a bushel or even a bag of most other fresh fruits, you must immediately peel, prepare, slice, sugar, bag, or cook and freeze prepared dishes. Not so with Ontario blue grapes. You can have them in the freezer in a matter of minutes, Just wash, pat dry, stem, bag, seal and freeze, The beauty of this process is that you can freeze vast amounts in a hurry, while they are very fresh, Then, as you want to make jam or desserts later on in the year, just pull from your labelled supply and voila! good tasting, good looking grape dishes right in the middle of winter. So, freeze them now, in the required amounts for these recipes. Clip the recipes for use this winter. Ontario Blue Grape Jam Makes a soft, tasty jam 6 cups Concord grapes. washed and stemmed (2 lbs.) 11/2 cups sugar Slip skins from grapes. Barely cover skins with water (about 11/2 cups). Bring to a boil and boil for 10 minutes, Boil pulp until soft, 10 minutes. Rub through a sieve to remove seeds. Combine pulp and skins. Measure (makes approx. 4 cups). Add 1/2 cup sugar to each cup of mixture. Quickly bring to a boil. Boil, stirring until con- sistency of jam, about 8 minutes, Squash! If you want to serve an easy but appealing vegetable, try acorn squash. Acorn squash tastes best when baked. It's an ideal choice to serve with an oven-baked main course sinee the two can be baked at the same time. No peeling is necessary; just wash and prepare as the recipe requires. Perhaps you would like to try the following recipe developed by food specialists at the Ontario Food Council, Ministry of Agriculture and Food. Baked Acorn Squash with peanuts 1 large Ontario acorn squash (about 2 pounds) 1/4 cup maple syrup 2 tbsp butter or margarine 1/2 tsp salt 2 tbsp chopped salted peanuts Cut squash lengthwise into quarters; discard seeds, then cut crosswise diagonal slashes, about 1 inch apart, in meaty sides of squash. Place squash, skin side down, in baking dish. In small saucepan gently heat syrup, butter and salt until butter is melted; brush or spoon some of the syrup mixture over squash. Bake at 350 degrees F for 1 hour, occasionally brushing or basting with remaining syrup mixture until it is all used. Sprinkle squash cavities with peanuts; bake until squash is fork-tender (10 to 20 minutes). Bring pulp to boiling; reduce heat and simmer 5 minutes. Press pulp through sieve to remove seeds, Add skins to pulp. Combine sugar, flour and salt. Add lemon juice, butter and grape pulp. Pour into unbaked pastry shell. Sprinkle Crumb Topping over filling. Bake in a hot oven, 425 degrees F, about 30 to 35 minutes. Crumb Topping: Combine cup flour and 2 tablespoons granulated sugar. Cut in 3 tablespoons butter until crumbly. Makes one 9-inch pie.
