Home canning can be dangerous

Pork Producers sso iation
decided to contin e w th the
Annual pork barbe ue and pork
hostess contest. The event will
take place on August- 28 in the
Seaforth Arena.
The pork hostesses will make
their presentation at 8 o'clock. All
girls between the age of 16 and 25
are invited to participate, At an
interview with the judges, the
contestants will be quizzed on
their knowledge of pork cooking,
display and presentation. Then
they will speak for one to two
minutes on the same subject.
The winner will receive a
beautiful pigskin jacket, donated
by the Bainton Old Mill in Blyth
and the runnerup will receive
$50. All other contestants receive
a cheque for $25. The township
directors Mr. Lloyd Stewart, RR
2, Clinton will receive entries,
Other promotion activities will
include a booth at the Zurich
Bean Festival and at the Blyth
Thresher Reunion.

Accurate and helpful information
is available through the county
offices of the Ministry of
Agriculture and Food, and
judging from the number of
canning inquiries received by
these offices, many consumers
are making use of that source this
year.

A few simple rules, offered by
the Ministry of Natural
Resources, could save your hide.
Wear light colored, smooth-
finished clothing, Beekeepers,
(although they do get stung on
occasion) wear white coveralls or
khaki pants and shirts for
protection,
Don't use hair oil, pomades,or
perfumes.Stinging insects love
em. They think perfume,
whether behind an ear or in a
flower, is a source of food, If a
bee lands on you and you slap it,
it may sting in self defence.
Take daily baths and showers,
and wear clean clothing, Sweat
stirs bees up.
Cover up. Bikinis look good on'
the beach but not near bees, Wear
ankle high shoes, white cotton
socks, when walking in fields,
Keep bees out of your hair by
wearing a straw hat or light-
colored kerchief,
Keep away from wildflowers.
Plants need pollination and bees
need food. They go together.
Run if attacked. Bees chase
you if their nest if disturbed. Find
cover fast, Indoors is best,
If one bee bothers you. Lie on
the ground, if possible, face
down. Bees often sting around the
eyes and head.
When driving and a bee flies
through the window, slow down
and pull over to the shoulder of
the road,•The bee is looking for an
escape hatch and will be gone
soon is you open all windows.
As the height of the holiday
season approaches, and many
families go camping in our
forests or along the water, the
incidents of people being stung by
bees and wasps will rise, It's best
to be careful at all times when in
the vicinity of stinging insects.
Some people are extremely
allergic to bee stings and need
medical help fast. Others have
a milderreaction.
A simple first aid treatment
prior to getting medical help is to
remove the stinger, if the insect
has not withdrawn it, by scraping
it out with a sterilized knife. To
ease the pain use a compress of
common baking soda, slightly
moistened with cold water.

Homemakers' renewed in-
terest in canning as an economy
measure could lead to an in-
creased incidence of botulism
according to concerned
specialists at the Ontario Food
Council.
The Ministry of Agriculture
and Food experts point out that
spores of the baterium
Clostridium Botulinum, which
cause this food poisoning,
flourish in an airtight, low-acid
environment such as a sealed jar
of vegetables, and multiply to
produce the deadly toxin botulin.
Since these spores can survive
the temperature of boiling water
under airtight conditions, you
could boil your filled jars in a
water bath processor for an hour
or a day, and the baterium, if
present, would still produce the
toxin.
The best way to be really sure
your home canned vegetables are
safe for your family to eat is by
pressure-canning. By subjecting
your sealers to pressure, you can
raise the temperature of the
contents of the jars beyond that of
boiling and destroy the spores
before they produce the toxin,
Alternatively, when the time
comes to use the vegetables you
canned last year without the aid
of a pressure canner, open the jar
and, without tasting, drop the
contents and liquid into a
saucepan and boil the mass at a
rolling boil for 10 minutes,
stirring. The toxin, if present,
will be destroyed,
If you have used a pressure
canner, but have not had the
gauge checked recently, or
cannot remember exhausting all
the air from the valve, you too,
should boil your home-canned
vegetables, stirring, for 10
minutes before tasting or ser-
ving. Although this kind of
treatment takes a lot of goodness
out of the vegetables, it's an
added precaution that could save
the lives of yourself and your
family.
