Turn dough out on a lightly floured surface and knead 8 to 10 minutes, Shape into a smooth ball Cover and let rise until doubled (about 112 hours) THIS IS ENOUGH DOUGH TO MAKE THREE RECIPES OF CHELSEA BUNS, DIVIDE INTO THREE, Chelsea Buns In a 13x9 inch cake pan melt 1 2 cup butter Stir in 1 1/3 cups lightly packed brown sugar 11 2 tablespoons corn syrup Blend until smooth Sprinkle with 2/3 cup coarsely chopped pecans Allow to cool Roll out slightly more than one third of dough on a lightly floured surface into a rectangle 24 x 9 inches. Spread with 3 tablespoons soft butter sprinkle with a mixture of 1 cup lightly packed brown sugar 1 teaspoon cinnamon 34 cup seedless raisins Distribute as evenly as possible over top. In the Fry Chocolate cake special Ila Love took first place, Mrs. Ray Cockwill second and Audrey Mitalls third. Mrs. Wilfred Colclough of Clinton took the prize in the Neilson's special. In the Schneider's specials Mrs.Wilfred Colclough took the first prize for apple pie, Mrs. Ray Cockwill for chocolate cake and Mrs. Ray Cockwill for butter tarts. Winning recipe This year's baking Queen of the Exeter Fall Fair, Mrs. Dorothy Balsdon, has agreed to share some of her prize winning secrets with the T-A readers. This week we are publishing her recipe for chelsea buns which won her a first place ribbon at the fair. The basic dough is enough to make three recipes of chelsea buns or about 72 buns. Or you can try the other two recipes offered which use the same basic dough. Sweet Dough BAKING QUEEN Balsdon of Exeter queen honours at and was crowned editor Terri Irvine one second and one third. In the home-canned products, Mrs. Pearl England of RR L Crediton, placed first with two red ribbons, two blue and two white. Bethel Reformed Church took second place with two firsts and one second and Mrs. Dorothy Balsdon, Mrs. Keith McLaren and Margaret Cook tied with one first and one second each. Mrs. Howie Wright of Hensall placed first in the jams and jellies with three firsts and one second. Exeter United UCW was second with one first and two seconds and Jack Underwood and Mrs. Gordon Smith tied for third with one first and one third each. In the domestic specials Mrs. Harold Parsons placed first in the apple feature and Mrs. Gwen Coward of RR I, Woodham placed second. There were only two entries in the class. Mary Thompson of RR 2, Kippen took a red ribbon for her decorated birthday cake and Mrs. Shirley Cooper of Exeter was second with Bruce Shapton third. For a display of 20 or more canned products Mrs. Pearl England took first place, Mrs, Orlen Swartzentruber second and Mrs. L. Prang of Zurich third. There were only three entries. GRAND BEND w vow wer n#4—$ '6*-'4'-ditiPP-ampArrourrarAir000 4,40 Top Quality A-1 & A.2 Red Brand Despite the fact that rising prices of sugar, eggs and other baking staples kept many of the former baking queens from entering this year's domestic competition at the fair, the,area's pastry chefs and cake bakers were well represented, Women's president, Maxine Sereda reports that the entries in the dornesticdepartment were up in everything, "especially bread, pies and cakes, We were very surprised that there were so Many entries with the price of sugar up so high." This year's baking queen was Mrs, Dorothy Balsdon who received a crown and a $15 prize from the Times-Advocate. Mrs. Balsdon of Exeter took three firsts, eight seconds and seven third place ribbons. She was awarded red ribbons for her home-made white bread, her chelsea buns and her lemon pie. Mrs, Harold Parsons of RR 2, Kippen placed second in the competition with four firsts, six seconds and four thirds. Red ribbons were awarded to Mrs, Parsons for banana layer cake, marble cake, butter tarts and cherry pie. Ila Love of Exeter placed third with four firsts, one second and two thirds. Firsts were awarded to Mrs. Love for white cake, bran muffins, shortbread cookies and date squares. Mrs:.4gith McLaren of Exeter placed fourth'with four firsts and one third. She had first place standing for dark fruit cake, light fruit cake, angel cake and chiffon cake. This year's baking competition saw a new entry into the fair with Mayor Jack Delbridge's men's only class. Mayor Delbridge received a total of seven chocolate layer cakes to sample, The winning cake was baked by Floyd Cooper of RR 3, Exeter with Bruce Thompson and Gary Balsdon running a close second and third. The mayor donated a prize of $5 for the winning cake which he carried home to sample at greater length, The second prize winner was awarded $3 and the third place winner received $2. The mayor announced Friday night that a total of $20 would be donated for men's cake baking next year and he hopes to have even more entries. Mrs. Keith McLaren took top honours in the miscellaneous section of the domestic depart- ment with five firsts, and two thirds ,<,; .
