Good old days not all that good
CHEESE-BAKED POTATOES — Cheese adds a nourishing fillip to the trpditional baked potato in this main
course suggestion. Edam cheese melts readily when heated, making it ideal for this type of recipe.
Popular for centuries
Foods may change but not potatoes
For centuries potatoes have fed
both the rich and poor throughout
the world. The potato industry in
Canada dates back to 1623 when a
small patch was grown at Port
Royal in Nova Scotia.
Potatoes had many uses in the
kitchens of the early settlers.
They were used to make yeast for
bread and were crushed, boiled
and mixed with flour for
economy. Starch for the family
laundry was squeezed from the
grated pulp.
Potatoes are an excellent
source of Vitamin C, and food
energy. One boiled or baked
medium potato, without butter or
gravy contains about 100
calories.
Even though our country's food
habits change, potatoes maintain
their popularity. This time of PREPARING SETS — Many volunteers are currently helping with

cleaner to wisk through the
house, think how Great-grandma
coped with the job ,a hundred
Years ago.
According to 'The Home Cook
Book' printed in 1877, keeping
house was a serious btfsiness and
not to be sluffed off even by 'the
Wealthiest women of the oldest
families in society'.
`Housekeeping ought not be
taught in classes and by
professors,' the author says. 'It
should be imbibed without effort
in girlhood instead of being taken
up at marriage and ex-
perimented on with varying
certainty for the rest of one's
natural life,'
She goes on to state, 'There is
no chance about housekeeping. If
Mrs. Smith's sitting room is
always neat and fresh, it is
because she sweeps it with tea
leaves, and sponges the carpet
with ox gall, and dusts with a
damp cloth, and keeps a door mat
on the porch, and sends the boys
back to use it till they get the
habit of keeping clean,'
And you thought all those
devices and products you see on
TV were necessary for keeping
your place clean when all yen
needed was some ox gall and tea
leaves, Could help the cost of
living too!
Great-grandma was quite a gal
and certainly, no sissy according
to this book, Not only was she an
expert at housekeeping but she
was expected to have 'a dexterity
with tools' as well. The writer
continues, 'Many accomplished
women can set a pane of glass,
put on a door knob, and hang a
gate in the best of style. I know a
woman, a valued contributor to
the New York press who reads
Horace in Latin, makes point-
lace and who built with her own
hands the chinmey to her country
house.'
Make you feel a little
inadequate perchance?
Take heart . .. Grandma
didn't spend all her time cleaning
and hanging gates. Apparently
she had many of the same urges
of her modern counterparts and
enjoyed a change now and then. A
genteellady is quoted as saying
she liked to have her carpets
wear out SO she could get new
ones. She also says she let
lodgings to have company and
money to dress with, much
against her husband's wishes,
Her only dread was that of
`settling down and having a lot of
children with no theatres, no
opera and nobody to see'. Maybe
you have more in common with
good old Grandma than you
think.
LOCAL MAN WILL PREACH
The Rev.'Simon Nagel, graduate
of South Huron District High
School, will preach at Bethel
Reformed Church, Exeter, Sun-
day. During his school years here,
Simon was a popular athlete,
playing on local basketball,
baseball and hockey teams. He is
also a former• employee of The
Times-Advocate. For the past two
years he has been pastor of the
Reformed Church in Grand
Rapids, Michigan. He will preach
at the 10 a.m, service and again
at 7:30 in the evening.
Year, though, you may feel like
sprucing them up a bit. Try
Cheese-Baked Potatoes for a
change.
1 cup sifted all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
fat
Combine potatoes, egg and
butter and beat until fluffy. Sift
flour, baking powder and salt.
Add to potato mixture and knead
until well combined. Turn onto
lightly floured board, roll to 1/4 ”
thickness and cut in 12 wedges.
Panfry slowly in a little fat until
golden brown (about 5 minutes
each side). Serve hot, split and
buttered. Makes about 12 cakes.

Potato Candy
1 medium potato
1 tablespoon butter
1/4 teaspoon almond flavoring
3 cups icing sugar
Boil potato with skin on until
tender; remove skin and mash
thoroughly. Add butter and beat
until light. Add almond flavoring
and icing sugar in small quan-
tities, working it in thoroughly
with the fingers. When all the
sugar has been added, knead on a
board until smooth. Form into
balls and dip into melted
chocolate OR place between two
walnuts halves and press
together,OR useas a stuffing for
dried fruit. Makes about 1,pound.
YOU NEED SOME

Cheese-Baked Potatoes
4 medium sized potatoes
11 2 cups shredded cheese
'4 cup commercial sour cream
1 tablespoon butter
1 teaspoon creamed horseradish
1 tablespoon minced parsley
salt and pepper
Scrub potatoes. Place on
baking sheet and, bake in
preheated 425 degrees F oven
until soft (1-11/2 hours). When
cooked, cut in half lengthwise,
scoop out potato centre and
mash. Mix mashed potato with 1
cup shredded imported Holland
Edam, butter, sour cream and
seasonings. Place filling back in
shells, sprinkle with remaining
shredded cheese. Return to
preheated 350 degrees F oven for
about 20 minutes until cheese
melts and filling heats through.
Makes 4 servings.

sorority members
Two chapters of Beta Sigma
Phi sorority celebrated Foun-
der's Day at a banquet April 16 at
the Exeter Curling Club,
Special honor was paid to
Diane Wooden and Marilyn
Wilson who received the Order of
the Rose Degree for 15 years
active membership.
The Girl of The Year awards
were given to the girl chosen by
each chapter for outstanding
service during the past year.
Alice Beer was the choice of
Alpha Pi chapter and was
crowned by Mrs. Lillian Camp-
bell. Carol Reid of Xi Gamma Nu
was crowned by Mrs. Bob Din-
ney.
Receiving the pledge ritual
were Barbara Grant, Maryann
Topp, Carol Bishop and Jo Anne
Dinney.
The Ritual of Jewel degree was
conferred on Glenda Wagner, Sue
Smith, Marion McCarter, Carol
McDonnell, Eila Martin, Eileen
Ross and Pat Cottrell.
Maude Connon received the
Exemplar • degree having com-
pleted the Course of study offered
by Alpha Pi chapter, She now
becomes a member of the
Exemplar chapter, Xi Gamma
Nu.
The international prize winning
sorority song, 'What Color Is
Love' was sung by Ada Dinney,
Sally Lou Raymond and Glenda

Minister to preach
at son's ordination
The Rev. Kenneth Anderson
will be ordained to the priesthood
at a service in St. Paul's Anglican
Cathedral, London, May 1. He is
the son of the Rev. George and
Mrs. Anderson of Trivitt,
Memorial Church, Exeter, and
his father will preach the service
on this special occasion.
Kenneth is presently assistant
to the Rev. Canon Derwyn Jones,
rector of St. James Westminster
Church, London. Rev. Jones lived
in Exeter as a child when his
father, the late Rev. Walter Jones
was the rector of Trivitt from
1927 to 1929.
The ordination service will be
conducted by the Bishop of
Huron, the Rt. Rev. David Ragg.
