Edam cheese melts readily when heated, making it ideal for this type of recipe. Popular for centuries Foods may change but not potatoes For centuries potatoes have fed both the rich and poor throughout the world. The potato industry in Canada dates back to 1623 when a small patch was grown at Port Royal in Nova Scotia. Potatoes had many uses in the kitchens of the early settlers. They were used to make yeast for bread and were crushed, boiled and mixed with flour for economy. Starch for the family laundry was squeezed from the grated pulp. Potatoes are an excellent source of Vitamin C, and food energy. One boiled or baked medium potato, without butter or gravy contains about 100 calories. Even though our country's food habits change, potatoes maintain their popularity. If Mrs. Smith's sitting room is always neat and fresh, it is because she sweeps it with tea leaves, and sponges the carpet with ox gall, and dusts with a damp cloth, and keeps a door mat on the porch, and sends the boys back to use it till they get the habit of keeping clean,' And you thought all those devices and products you see on TV were necessary for keeping your place clean when all yen needed was some ox gall and tea leaves, Could help the cost of living too! Great-grandma was quite a gal and certainly, no sissy according to this book, Not only was she an expert at housekeeping but she was expected to have 'a dexterity with tools' as well. LOCAL MAN WILL PREACH The Rev.'Simon Nagel, graduate of South Huron District High School, will preach at Bethel Reformed Church, Exeter, Sun- day. During his school years here, Simon was a popular athlete, playing on local basketball, baseball and hockey teams. He is also a former• employee of The Times-Advocate. For the past two years he has been pastor of the Reformed Church in Grand Rapids, Michigan. He will preach at the 10 a.m, service and again at 7:30 in the evening. Try Cheese-Baked Potatoes for a change. 1 cup sifted all-purpose flour 3 teaspoons baking powder 1/2 teaspoon salt fat Combine potatoes, egg and butter and beat until fluffy. Sift flour, baking powder and salt. Add to potato mixture and knead until well combined. Turn onto lightly floured board, roll to 1/4 ” thickness and cut in 12 wedges. Panfry slowly in a little fat until golden brown (about 5 minutes each side). Serve hot, split and buttered. Makes about 12 cakes. A reader recommends this recipe for Potato Candy. Potato Candy 1 medium potato 1 tablespoon butter 1/4 teaspoon almond flavoring 3 cups icing sugar Boil potato with skin on until tender; remove skin and mash thoroughly. Add butter and beat until light. Add almond flavoring and icing sugar in small quan- tities, working it in thoroughly with the fingers. When all the sugar has been added, knead on a board until smooth. Form into balls and dip into melted chocolate OR place between two walnuts halves and press together,OR useas a stuffing for dried fruit. Makes about 1,pound. YOU NEED SOME B LOC K-ing ON Cheese-Baked Potatoes 4 medium sized potatoes 11 2 cups shredded cheese '4 cup commercial sour cream 1 tablespoon butter 1 teaspoon creamed horseradish 1 tablespoon minced parsley salt and pepper Scrub potatoes. Place on baking sheet and, bake in preheated 425 degrees F oven until soft (1-11/2 hours). When cooked, cut in half lengthwise, scoop out potato centre and mash. Mix mashed potato with 1 cup shredded imported Holland Edam, butter, sour cream and seasonings. Place filling back in shells, sprinkle with remaining shredded cheese. Return to preheated 350 degrees F oven for about 20 minutes until cheese melts and filling heats through. Makes 4 servings. The Irish have always been famous for potatoes. The Girl of The Year awards were given to the girl chosen by each chapter for outstanding service during the past year. Minister to preach at son's ordination The Rev. Kenneth Anderson will be ordained to the priesthood at a service in St. Paul's Anglican Cathedral, London, May 1. He is the son of the Rev. George and Mrs. Anderson of Trivitt, Memorial Church, Exeter, and his father will preach the service on this special occasion. Kenneth is presently assistant to the Rev. Canon Derwyn Jones, rector of St. James Westminster Church, London. Rev. Jones lived in Exeter as a child when his father, the late Rev. Walter Jones was the rector of Trivitt from 1927 to 1929.
