When someone inquires where
I live, I tell them at Porter's Hill.
Most of you are probably asking
yourselves, "Where in the world
is that?"
If you have a road map handy,
locate Clinton, Bayfield, and
Goderich. Then draw a circle
encompassing those three points.
In approximately the centre of
the circle is Porter's Hill, At least
it would be if surveyors were in
the habit of recording it.
Modern maps don't include the
name of Porter's Hill. In fact;the
weather-beaten sign, which
adorned a corner post of the
schoolyard, disappeared years
ago.
To learn about the com-
munity's past, I read historical

accounts of Huron County and
talked with senior residents of the
area, "The Settlement of Huron
County" by James Scott devoted
one paragraph to Porter's Hill,
This community was named for
the family which originally
settled here. On January 7, 1863,
it became one of the few small
settlements to achieve Post
Office status. The first postma ter
was - you guessed it - a member
of the Porter family, Robert,
The community lacked a
significant period of growth or
development. During its boom,
Porter's Hill boasted a general
store, a blacksmith's shop, one
school, and a Temperance Hall.
One by one the buildings were
destroyed, lost their usefulness,
or changed their roles. A
southeast wind, for example,
scattered the. boards of the
Temperance Hall over the school
grounds in 1903. As a result, the
spirits either rose or fell
depending upon the individual.
Between 1863 and 1865, the
general store opened. Today's
consumer drools at a price list
from the year 1900: a bottle of
turpentine, 5 cents; 1 spool of
thread, 4 cents; 1 plug of chewing
tobacco, 7 cents; 25 lbs. of flour,
57 cents; 1 lb of butter, 14 cents; 1
dozen eggs, 5 cents; a broom 20
cents; 1 straw hat, 20 cents; 21/2
yards of of cretonne, 35 cents. In
the same era, though, one week's
labour earned only $10.00,
A succession of proprietors
owned the store, and business
was plentiful. When the structure

this week with Mr. & Mrs. Fred
Parkinson, Margaret and Janet.
The annual variety night was
held at South Perth Centennial
School, Friday evening with a
good crowd attending. A program
of skits, musical numbers,
dances and a double quartette
was much enjoyed.
Mr. & Mrs, Gerald Brintnell
and Scott spent last weekend in
Trenton, Michigan where Scott
was taking part in a hockey
tournament.
At breakfast, try slicing the
meat and broil or fry it as a nice
change. Cut it into cubes or strips
and it becomes a delicious ad-
dition to hearty main course
salads and satisfying casseroles,
Luncheon meats are suitable for
all kinds of sandwiches from
open-face to lofty club sand-
wiches,
As an appetizer arrange cubes
of canned luncheon meats with
pineapple chunks, olives, pickles
or cheese on toothpicks. Some
evening soon make the family
feel like company by baking
luncheon meat whole and
dressing it up with a glaze. Try
the Marmalade or Peach Glaze
suggested by Food Advisory
Services, Agriculture Canada.

Canned luncheon meats,
commonly recognized as "the
can with the key" offer a great
variety of eating pleasure at
mealtime. They fit in easily at
breakfast, lunch,dinner and even
in-between-meal snacks.
In recent years different types
of canned meat products have
appeared on the market from
baby food and stews to the solid-
pack luncheon meats. The latter
are made by pressing particles of
cooked fresh or preserved meat
into shape. When we turn the key
to open the can, we can be
assured of quality. They are
manufactured according to Food
and Drug Regulations which
specify the kind of meat and limit
the other ingredients which may
be added. There are also
regulations for the size and type
of containers, labels and
markings.
Canned luncheon meats are
ready-to-serve products so that
they are convenient as well as
economical.

combine remaining ingredients
and brush on meat. Bake 20

"I really don't recommend

Edwards said laughing.

burned in 1922, however, it was
110t rebuilt,
Education, meanwhile, was
administered in a one-room
frame building. In 1918 the frame
was covered with red bricks.
Advanced education and new
facilities closed the old
schoolhouse by the mid-sixties,
The dwelling, which has stood for
over 100 years, now serves as a
summer residence for a Chicago
family.
The Porter's Hill settlers at-
tended two neighbouring chur-
ches - Bethel Methodist and
Bethany Presbyterian, Each was
located one mile from the set-
tlement, In modern times, that
distance sounds trivial. But in the
horse and cutter days of harsh
winters and unplowed roads, the
trip presented a challenge.
Nevertheless the attendance was
high.
In 1927 the two congregations
amalgamated. Together they
erected an edifice south of the
Porter's Hill store. Furnishings
and materials from the original
churches were used in the new
one - Grace United, Enthusiasm
was bountiful, and for many
years the congregation thrived.
Gradually, though, its mem-
bership dwindled, Five years ago
Grace United Church finally fell
beneath the auctioneer's ham-
mer, The building has since been
renovated into an apartment.
Throughout my studies of the
pioneer days, I was impressed by
the "feeling of community." The
early settlers worked together to
establish themselves and their
surroundings. Now old neigh-
bours leave and new neighbours
soon arrive. Sometimes they
move again before we become
acquainted. Busily we perform
our private affairs seldom
noticing the strangers we meet.
Porter's Hill, like many other
rural settlements, has practically
vanished. Because modern
technology links the world, we
now belong to a much larger
community. We face common
problems, fears and goals.
Unfortunately we seem to have
lost that vital "feeling of com-
munity."
