A first for Huronyiew took
place Wednesday with the for-
ming of an over 90 Club. Thirty-
three of the forty-nine eligible
residents attended the get-
together which will be held on the
second Wednesday afternoon of
the month. Mrs. Hamilton who is
ninety-nine had the honour of
being the eldest lady with the
eldest man being Mr. Kingswell
at 95, Slides of events at the Home
were shown and a sing-a-long led
by Jacke Roorda, Mrs, Luckham
a new volunteer from Clinton
assisted the kitchen staff serving
tea and cookies in the dining
room,
Mrs. Don Hamley and Mr. &
Mrs. Bill Marsh of Clinton
provided a musical program for
"Family Night," Miss Mae
Davies thanked the entertainers
on behalf of the residents.

24 arranged by Jim Lawrie of

Exeter chapter
At the January meeting of
Exeter Chapter, Order of the
Eastern Star, the special guest
was Mrs. Wm. Teeple, District
Deputy Grand Matron of District
No. V.
She was making her official
visit as the representative of the
Worthy Grand Matron and
brought greetings from' the
Grand Chapter of Ontario.
Mrs. Teeple gave an in-
structive and interesting talk on
the work of the Order,
A gift from the Chapter was
presented to her, and a donation
to her special benevolent project,
Crippled Children's Fund.
Guests were present from
eleven other chapters of the
District

Miss Jeannie Cutting of London,
Mrs. Marjorie Tompkins and
daughter, Mrs. Leonard

funeral of the late Mary Cutting
last Tuesday afternoon,
Miss Agnes Cutting is a patient
in the South Huron Hospital,
Exeter.
Faced with higher food costs,
everyone is talking about beans,
especially soybeans. They are
praised as being a low-cost,
highly-nutritious food - the pot of
beans at the end of the guest for
cheaper protein dishes.
Food Advisory Services
Agriculture Canada have one
solution for the puzzled cooks who
are coping with providing
economical and nutritious meals.
While soybeans are providing
high-quality protein along with
many vitamins and minerals
they also do wonders for the
budget.
In fact a soybean dish, served
with eggs, cheese or milk will
replace the meat protein in a
meal at a much lower cost.
However, few people know what
to do with soybeans once they get
this revered legume home.
Dry soybeans can be used in
casseroles, soups, salads -
anywhere you would use navy or
kidney beans. But like these they
must also be soaked and cooked
before eating. Soybeans increase
three times in volume when
cooked so that one cup of dry
soybeans will give three cups
cooked.
To prepare soybeans wash 1
cup of beans and soak in 3 cups of
water 12 hours or overnight. Put
beans, water and 1 teaspoon of
salt in a pressure cooker and cook
at 15 pounds pressure for 15
minutes (20 minutes if they are to
be mashed).
If you don't have a pressure
cooker, put the soaked beans,
water and salt in a large kettle or
Dutch oven. Add enough water to
cover the beans and bring to the
boil. Reduce heat and simmer
until tender (about 3 hours) Add
water if needed. Makes 3 cups
cooked beanS.
For starters here is a good and
simple casserole to introduce
your family to soybeans,
SOYBEAN MACEDOINE
19-ounce can mixed vegetables
3 cups cooked soybeans
I2 cup grated medium cheddar
cheese
1 10-ounce can condensed tomato
soup
1 4 cup liquid from vegetables
2 tablespoons finely chopped
onion
teaspoon salt
3 4 cup soft bread crumbs
Drain vegetables and reserve
liquid. Combine vegetables with
remaining ingredients except
crumbs and place in greased
baking dish. Top with crumbs
and bake 30 minutes at 350
degrees F. 6 servings.
