Abattoir opening
Continued from page 12
Merner's. Ron explains there are
no secret ingredients, although
Dashwood sausage is made from
the entire hog with the
exception of pork chops and
spare ribs.
Many butchers make sausage
because they have ingredients
not saleable in any other form,
but Merner's butcher hogs to
make sausage.
No filler is used in Dashwood
sausage and the only seasoning is
salt and pepper.
It is much in demand in the
area and is sold at many area
stores and restaurants and during
the summer gets much demand
from resort area residents.
During the summer, it is not
unusual for Merner's to slaughter
up to nine hogs for sausage
manufacturing alone. This works
out to about 1,000 pounds of
sausage in one week,
Ron has been butchering for
several years, but bought the
business from his father, Milford
Merner, only two years ago.
The open house this week
marks the culmination of many
changes in the abattoir since he
took over the operation.
