DATE AND NUT LOAF
1 1/2 cups cut-up dates
1 tsp baking soda
1 1/4 pups boiling water
2 tbl butter
3/4 cup brown sugar
1 egg
1 tbl molasses.
1 tsp vanilla
2 cups pastry flour sifted
2 tsp Wising powcier
1 tsp salt
Sprinkle soda over dates, add
boiling water and butter. Cool
When thoroughly cooled add su-
gar, molasses, egg and vanilla.
Sift flour, baking powder and
salt together and add to above
ingredients. Add walnuts.
Bake in loaf pan in 350 de-
gree oven for 1 hour.

BRAN MUFFINS
1/4 cup shortening
1/2 cup brown sugar firmly
packed
1/4 cup molasses
2 eggs unbeaten
1 cup sweet milk
1 1/2 cup bran flakes
1 1/2 cup pastry flour
1 1/2 tsp baking powder
1/2 tsp soda
3/4 tsp salt
1/2 cup raisins (if desired)
Cream shortening and sugar;
add molasses and unbeaten egg.
Beat well; add milk and then
bran. Sift flour, baking powder,
soda and salt together; add
raisins.
Bake in hot oven 400 degrees
15 to 20 minutes. Makes 16
muffins.

QUICK BISCUITS
2 cups unsifted all purpose
flour
2 tsp baking powder
1/2 tsp salt
Sift these ingredients togeth-
er and add sour cream to make
a pliable dough, approximately
1 cup. Roll to a 1/2" and cut with
2 1/2" biscuit cutter. Bake at
400 degrees for 12 minutes,
yield — 1 dozen.

BANANA BREAD
1 3/4 cups sifted enriched flour
2 tsp baking powder
1/4 tsp baking soda
1/3 cup shortening
1/2 tsp salt
2/3 cup white sugar
2 eggs
1 cup mashed bananas (3 to 4)
Mix and sift flour, baking
powder, baking soda and salt.
Cream shortening, add sugar
gradually and then well beaten
eggs. To this add the flour mix-
ture alternately with the ba-
nanas, a small amount at a time,
beating until smooth after each
addition.
Turn into well greased loaf
pan and bake at 350 degrees

BANANA TEA BREAD
1 3/4 cups all purpose flour
2 tsp baking powder
1/4 tsp soda
1/2 tsp salt
1/3 cup butter
2/3 cup sugar
2 eggs, well beaten
1 cup mashed ripe bananas
Sift together flour, baking
powder, soda and salt. Cream
butter and sugar. Add eggs and
mix well. Add. flour mixture
alternately with mashed ba,
nanas. Beat till smooth.
Turn into greased and floured
bread pan (8 1/2 x 4 1/2 x3").
Bake at 350 degrees about 1
hour or until done.
For variation add 1 cup seed-
less raisins or 1 cup finely
chopped dates and 1/2 cup bro-
ken nut meats.

LIGHT PANCAKES
1 cup sifted all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
grated nutmeg
1 tbsp granulated sugar
1 egg separated
1 cup milk
1/4 tbsp melted butter
Sift flour, baking powder, salt
nutmeg and sugar together 3
times.
Beat egg yolk, stir in milk;
add flour mixture 1/4 at a
time. Beat until smooth after
each addition. Mix in butter.
Beat egg white until stiff
and fold into batter. Cook on
a hot griddle. Turn only once
— makes 12 medium pancakes.
