There's a triple treat in store
when you offer piping hot tri-
color salmon burgers to allay
the hunger pangs of the teen
crowd - or eager appetites of
just about any age.
The combination of salmon,
mellow melted cheese and sau-
teed onions accented With a little
chili sauce and layered between
heated hamburger buns, is an
enticing idea for lunch or snack-
time. And, it's a winner with the
stag members of the family who
go for a sandwich you can "get
your teeth into".
Admittedly, these are knife
and fork fare but that's no de-
terent to enjoying the good fla-
vors they provide. Nutritional
qualities are probably second-
ary considerations with many
people, but they shouldn't be
discounted; and these salmon
burgers provide plenty of im-
portant food elements, particu-
larly in the protein category.
TRI-COLOR
SALMON BURGERS
1 cup (1 can, approx. 1/2 lb.)
canned salmon, drained and
flaked
2 tbl finely chopped green pep-
per or celery
salt and pepper

mayonnaise
2 cups sliced onion
3 tbl shortening
6 hamburger buns
6 packaged Canadian cheese
slices
6 tbl chili sauce
Combine salmon and chopped
green pepper. Season to taste
with salt and pepper; blend in
enough mayonnaise to make of
spreading consistency. Saute
onion in shortening or butter,
covered, over low heat until
soft.
Meantime place hamburger
buns, split side up, on baking
sheet. Toast until golden in pre -
heated hot oven (425 degree)
or under broiler.
Lay a cheese slice on toasted
surface of each bottom bun half
and bake or broil until cheese
melts. Spread salmon mixture
lightly on top of melted cheese-
covered bun halves. Arr ange
onions over salmon; top with re-
maining bun halves, chili sauce-
side down. Serve immediately.
Makes 6.

to make up into pies or tarts
quickly, Here is her recipe:
5 cups all purpose flour
1 lb. lard
1 tbl. salt
Blend these ingredients to-
gether until lard is worked in
finely. Make a well in the centre
and add: one egg broken into
measuring cup and mixed lightly
with fork, 2 tbl vinegar and add
enough cold water to fill cup.
Mix with fork and keep in re-
frigerator. This makes enough
pastry for three to four pies.
PEACH PIE
For peach pie, slice 3 to 4
cups .peaches and add enough
water to be seen through the
peaches. Add 1 to 1-1/4 cups
sugar and bring to boil and
thicken with cornstarch. Cool
and fill pastry. Bake in 400 de-
gree oven for 10 minutes and
350 degrees for 15 minutes or
until done.
PEACH JAM
Here is Mrs. Sylvester's re-
cipe for a peach conserve which
is her favorite:
2 cups peaches cut fine
2 cups pears cut fine
2 cups crushed pineapple
2 oranges
1 lemon
5 lbs. white sugar
1 bottle liquid pectin
Put all ingredients together
using grated rind of oranges
and lemon, juice of lemon and
pulp of oranges. Boil for 20
minutes. Add pectin and when
it boils hard again remove and
add 1 small bottle of marasch-
ino cherries, cut as desired.
