TIMELY TIPS
When making a puffy souffle,
after putting the mixture in a
casserole to bake you make a
circle around the edge about an
inch deep with the bowl of a
spoon held vertically. This will
help the souffle to rise higher
in the centre and look attrac-
tive.

The WI program in the Yukon
and Northwest Territories of
Canada, a review of the year's
work and the election of officers
highlighted the 41st annual mee-
ting of South Huron WI District
Annual held in Northside United
Church, Seaforth, Thursday.
Mrs. George Wilson, RR 6St.
Marys, public relations conve-
nor in the Yukon and the North-
west Territories for the Fede-
rated Women's Institutes of Ca-
nada, was the speaker and sho-
wed slides of the life of the
people in the communities
where a WI branch has been
founded.
Mrs. Wilson said the FWIC
have been trying to devise ways
and means of promoting the WI
program in Northern Canada for
the past two years since Mrs.
William Hough, Stratford, who
was then living there, founded
four branches and, at last, a
plan has been set up on a national
basis called Unesco Gift Plan
#36'7.
Last August and September
Mrs. Hough, now living inStrat-
ford, revisited these branches
and formed four more in other
settlements. "To keep these
functioning and aiding them as
much as possible in these iso-
lated regions is the FWIC pro-
ject co-operating with Unesco"
said Mrs. Wilson, who was in-
troduced by Mrs. Fred Beer,
Hensall.
Miss Isabel Gilchrist, Huron
home economist, said that Hu-
ron County ranked the highest
in the province in number of
4-H homemaking clubs and
number of participants. Taking
the latest project "Well Dres-
sed and Well Groomed" were
41 clubs with 469 girls as
members. "It is quite a feat to
inspect the dusters and mark
the record books of all these
girls for the four Achievement
Days in the county," said Miss
Gilchrist. She completes her
work in Huron County as home
economist in Jtme, having ac-
cepted a teaching position.

the election and installation of
