Miss Isabel Gilchrist, Huron
home economist, reported that
there were 34 4.11 Homemaking
clubs with 425 members in
Huron taking the current pro-
ject "F eaturing Fruit",
Achievement days would be
held in Wingham November 11,
Clinton, December 9 and Sca-
forth, January 6. The spring
project is to be "Separates for
Spring."
Jolly Jilis of the Hurondale
Institute had had an exhibit at
Western Fair and Seaforth and
Teeswater clubs had exhibited
at their local fairs, Miss Kath-
ryn. Hicks had been a 4 -II dele-
gate on a trip to Ottawa and
Miss • Marjorie Papple, Sea -
forth, had just returned from
a UN trip.
Miss Gilchrist expressed her
appreciation to the WI
branches for their co-operation
in the 4-H work which was re-
sulting in better honiemakers
for the communit5'.

Following along the latter
theme, Mrs. Norman Coulthard,
RR 1 St, Pauls, president of
South Perth WI, gave a report
on the second national conven-
tion of the Federated Women's

VancouVer in June and quoted

The theme of the convention,
to which Mrs. Coulthard was a
delegate, was "The Challenge
of Tomorrow." She announced
that the ACWW convention
would he held in Melbourne,
Australia, In October 1982.
In the reports from the three
• districts, East Huron, West
Huron and South Huron, it was
revealed that there were 31 WI
branches in Huron County with
'a membership of 1,284 with
• four junior branches. An. invita-
tion was accepted to meet in
East Huron next year and it
was decided to meet at the

Leadership training
Mrs, E. Lyons gave an ex-
cellent report of the leadership
training school held at Gode-
rich last winter, 'She said it
was a good idea for any or-
ganization to send its incoming
president to this ,school—it was
one way to honor her and in-
directly a help to the group.

rict would send a delegate to
this school and one of the
delegates in turn give a re-
port at the rally. South Huron
district delegate was named to
report at the 1962 rally,
Features of program
A film "Assignment Child-
ren" was introduced by Mrs.
Alvin Moir and was presented
by Mrs. Allen Fraser, Exeter.
A hobby display was an im-
por(ant feature of the day and
during the lunch hour these
were viewed and commented
upon.

pointed out that morale is the

We are proud and pleased
with the competition in -the la-
dies' department of the Exeter
Fair last Thursday, So many
participated in the different
sections that it all added up to
a good Indoor exhibit,
We salute the champion cook
Mrs. William French, of Wha-
len and Mrs. Frank Glanville
who was the champion last
year, won the jam and jellies
trophy this year and also many
others who won special prit
zes,
Mrs. French likes to bake
cakes, -pies and tarts best. and
cooks fir a family of four, her
husband, two sons and a
daughter at home: Earl, 14;
Laura, 12 and Joe, 7, Her eld-
est daughter is married.
It was the first time she had
entered any exhibits at the fair
and in addition to her baking
for competition, she supplied
more than four dozen tarts for
the booth.
Mrs, French has vary gra-
clusly given us 'some recipes
which •she frequently uses in
her home,
Pineapple Squares
Mix together and spread in
an 8x10 pan saving 1 cup for
the top;
18 single soda biscuits
(crushed)
1/2 cup flour
1/2 cup butter
1/2 cup sugar
1/2 cup fine coconut
Put in a saucepan and cook
together:
1 cup pineapple (crushed)
1/4 cup gran. sugar
1 tbl cornstrach
1 tbl butter
1 tsp vanilla
2 egg yolks, beaten
Spread on first mixture in
pan. Beat 2 egg whites, add 4
tbl sugar and spread on top of
pineapple mixture. Sprinkle the
cup of crumbs on top and bake
in a slow oven till lightly
browned.
Meat Loaf
1 lb ground beef
1/2 cup oatmeal
1 beaten egg
1/4 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
2/3 cup tomato juice
Combine all ingredients tho-
roughly. Pack firmly into a loaf
pan, Bake in a moderate oven
(3590) for 1 hour. Let stand 5
minutes before slicing.
Meat Pies
Mrs. Jack Mitcher won first
prize for meat pies and she
kindly shares her recipe with
you.
Heat in frying pan g tbt slior
tening or dripping.
Add to hot fat:
1 lb, minced lean beef
1 cup chopped onion
Fry, stirring occasionally un-
til mixture is lightly browned.
Add;
1 tsp. salt
1/4 tsp pepper
1 tsp sugar
Stir in
1/3 cup tomato catsup
1 cup water
2 tsp prepared mustard
1 tsp worcestershire
sauce
Cover closely and simmer
slowly, stirring occasionally
for 15 minutes,
Lineindividual pie tins with
pastry. Fill with hot meat
mixture, Cover with pastry
top. Bake at 425 degrees for
five minutes. Turn oven to
350°. Remove from oven when
pastry is nicely browned.
Raisin Pie
Mrs. Fulcher also won first
for paisin pie.
Boiling Water Pastry
3 cups flour
1 tsp sugar
1 tsp baking powder
3/4 tap salt
Sift above ingredients to-
gether,
Pour 1/2 cup boiling water
over 1 full cup real soft short-
ening. Stir until. melted, Sift
in dry ingredients and blend.
Put in refrigerator. Remove
and let soften an hour before
rolling.
Filling
1 1/2 cups raisins (seedless)
3/4 cup brown sugar
1 tsp vanilla
Soak raisins in cold water 1
to 2 hours. Rinse well, discard -
Ing water. Put raisins in sauce,
pan with enough water to co-
ver. Cook at. moderate tempe-
rature until raisins are soft.
Add sugar and cook a few min-
utes longer. Thicken with corn-
