Wasn't that Christmas turkey
good? But one can have too
much of a good thing and home-
makers are faced with the prob-
lem of using up the turkey left-
overs and making them appetiz-
ing and tempting.
At a recent meeting of Credi-
ton Women's Institute, Mrs. Ross
Krueger demonstrated the mak-
ing of turkeyburgers. This is
one way to use slices of left-
over turkey or a whole turkey
may be cooked to serve in this
way. It makes a splendid main
dish for a buffet meal.
Turkeyburgers
(Mrs. Ross Krueger)
The secret in serving turkey-
burgers is to have all the in-
gredients piping hot. Even if the
turkey is carved as soon as it
comes from the oven the meat
has cooled considerably by the
time the carving is finished. So,
in any case, plan to heat the
turkey by wrapping in tin foil
and placing in, the oven. Sepa-

from the liquid left from roast-
ing the fowl. Added gravy from
a previous pork or beef roast
will give flavor, color and quan-
tity.,
The burgers are almost a
meal in themselves says Airs.
Krueger. Vegetables may be
served too, if desired, but salads,
relishes and potato chips will
prove enough in most cases,
Another turkey dish which we
like very much is served at
Armstrong's Restaurant where
the creamed and seasoned cut-
up turkey is served on halves of
hamburger buns placed cut side
up. Airs. Armstrong is so ac-
customed to working in quanti-
ties that it is difficult to cut this
recipe down to family size.
The foundation is a smooth
cream sauce with the added
mushrooms and cut-up turkey.
We suspect the trick in this
recipe is in the seasoning which
is subtle and pleasing.
These hints we hope will start
