Here isan- other taken from "Our Best," a handbook of favorite recipes cempUed and published by the Evening Auxiliary of First•St. Andrew's United Church, London. Mocha Torte One large angel or chiffon cake. one day old. Slice into 5 layers crosswise, using a thread. Filling Cream '1.1b. butter or mar- garine. Gradually add 11 cups sifted fruit sugar and cream well together. Add a few grains of salt, 1 tsp. vanilla and 2 egg yolks. Beat thoroughly and add 2 squares unsweetened chocolate, melted, and 6 tbsp. double strengh coffee. Fold in 2 egg whites, s, beaten stiff, and spread between the layers of cake. Chill overnight. The next day 'frost with whipped cream, sweet- ened and flavored with vanilla. Garnish with red candy hearts Jar St, Valentine's Day or frost with strawberry frosting. Strawberry Frosting 1 cup drained, thawed straw- . berries 1 cup fine gran, sugar 1 egg white, unbeaten Place aU ingredients together and beat until frosting is fluffy and thick. Tint with a few drops of red coloring if desired. Jarvis) 1 tin condensed mushroom soup 11 cups diced cooked chicken cup diced cooked ham 1 cup mushrooms, fresh or canned 1 cup milk Combine soup and milk, add chicken and ham. Season to taste. Pour in greased casserole. Ar- range mushrooms on top. Bake 375 degrees for 30 minutes. Serve in warm patty shells. Someone told me today that patty shells freeze well. Taken e n out of the freezer and heated, they are as freshas when baked. We hate to bring you back to reality, but with the coming of the lenten season and a busy season, too, our thoughts turn to meatless meal planning and quick and easy dishes. A recent release from the Gen- eral Foods Kitchens, suggests a Salmon Rice Jumble. Salmon Rice Jumble 13 cups packaged pre -Booked rice, prepared in ii cups boiling water and 3 tsp. salt, as directed. 1 can cream of mushroom soup t cup milk I lb. can salmon drained ;.nd flaked dash of pepper 2 tsp. lemon Juice (optional) Combine soup and milk in saucepan. Heat, stirring occasion- ally, Add salmon and pepper. Mix and heat thoroughly. Add lemon juice and stir to blend. Makes 4 or 5 servings. Serve over the rice or add rice to the creamed mixture and mix lightly and serve at once. Can also be turned into a 4 -cup casse- role, sprinkled with buttered crumbs and broiled 2 or 3 minutes.
