After packag ing parcels for the lads Overseas, and giving toward the Christmas War Benefits, there are few extra pennies for luxuries these days. This cake may be made a week previous to Christmas Day. (But do not forget to file this recipe if you are not going to .make it this week.) A plain butter icing may be used as frosting. ijc * * * The mock mincemeat recipe will make a satisfactory dessert even in plain pastry. Green tomato mince meat is another useful recipe. As for the carrot pudding—it’s delicious any time, and it is really economical to make and bake. You just put a layer of wax paper over the baking dish; tie a string around the rim and place on a stand in the well-cooker of the electric-'range with only one cup of hot water in the utensil. Why not try carrot pudding in place of plum pud ding this year? ' .* ; ' RECIPES Wartime Christmas Cake cup lard cup granulated sugar egg (well beaten) cup unsweetened applesauce cups all-purpose flour tsp. baking soda i ■ ■ tsp. salt Sultana raisins allspice nutmeg cinnamon chopped chopped < cherries < almonds chopped Cream lard until soft. Add sugar gradually and cream thoroughly. Add beaten egg and beat into mixture. Add applesauce and mix well, again. Sift the dry ingredients together and mix Vz cup of this mixture with the rais ins, citron peel, cherries and almonds. Add the remaining dry ingredients to the cake mixture and fold into the floured fruit and nuts. Turn into a loaf pan 10 x 5 x 3% inches lined with 2 layers of oiled paper. Bake in in electric oven at 300 deg. (1 lb. less 4tb.) soft butter 1 " ’’ 9 Ys lb. brown sugar eggs cup cranberry sauce or current jelly Prepare all the fruits and nuts; the dates should be chopped, the seeded raisins separated, the seedless raisins and currants washed, drained and spread out on a shallow pan to dry slowly in the oven. Chop the pine apple, sliver citron, chop the cherries and cut the peels fine. Combine these fruits and add the nuts. Measure the flour and sift 3 times with the baking powder, soda, salt and spices. Use part of the flour to coat fruits and nuts. Cream the butter.. and gradually blend in the brown sugar. Beat the eggs until very thick and- light and add, combining well. Mix in the dry ingredients, then the fruits and nuts. Add, the cranberry sauce or currant jelly. Combine th?, mixture y?ry thoroughly and turn lilt© pans which have been , lined with three layers of greased heavy paper. Bake in a slow oven, 275 degress to 300 degrees for 2% to 3% hours (depending on size of pans). Can you use large gumdrops? ANSWER: We think you are wise to serve this economical cake. Large gumdrops may be used but stir in just as the batter is poured into the baking pan. Put bacon fat into skillet and heat, add apples and cook over low heat from 3 to 5 minutes, until light brown, stirring as a portion of the apples brown to allow others to brown.
